Crispy Fried Green Tomatoes
Meta Description: These crispy Fried Green Tomatoes are coated in seasoned flour, cornmeal, and breadcrumbs, then fried until golden and crunchy. A classic Southern side dish everyone will love.
Fried Green Tomatoes are a classic comfort-food favorite with a wonderfully crispy coating and a juicy, slightly tangy center. The key is using firm, unripe green tomatoes, which hold their shape beautifully when fried.
Each tomato slice is dipped in a seasoned flour mixture, coated with egg and buttermilk, then covered in a crunchy cornmeal-breadcrumb mixture. After a quick fry until golden brown, they’re ready to serve with your favorite creamy dipping sauce.
Ingredients
For the Tomatoes
- 4 large firm green tomatoes
- 1 cup all-purpose flour
- ½ cup cornmeal
- ½ cup breadcrumbs
- 2 large eggs
- ½ cup buttermilk
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper, optional
- Vegetable oil, for frying
For the Dipping Sauce
- ½ cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon chopped fresh parsley
- Salt and black pepper, to taste
Instructions
1. Slice the Tomatoes
Wash and thoroughly dry the green tomatoes.
Cut off the tops and bottoms, then slice each tomato into approximately ¼-inch to ½-inch thick slices.
Avoid slicing them too thin because they can become soft during frying.
Arrange the slices on a plate lined with paper towels and lightly sprinkle both sides with salt.
Let them sit for about 10–15 minutes.
Pat away the moisture that collects on the surface. This helps the coating stick and prevents excess moisture from making the crust soggy.
2. Prepare the Coating Stations
Set up three shallow bowls.
Bowl 1: Combine the flour, garlic powder, paprika, onion powder, salt, and black pepper.
Bowl 2: Whisk together the eggs and buttermilk.
Bowl 3: Combine the cornmeal and breadcrumbs.
Add cayenne pepper to the cornmeal mixture if you want a little heat.
3. Coat the Tomatoes
Take one tomato slice and dredge it in the seasoned flour.
Shake off the excess.
Dip it into the egg and buttermilk mixture, making sure it’s completely coated.
Finally, press it into the cornmeal-breadcrumb mixture until both sides are generously covered.
Repeat with the remaining tomato slices.
For an extra-crispy crust, repeat the egg and cornmeal steps once more.
4. Heat the Oil
Pour about ½ inch of vegetable oil into a large heavy skillet.
Heat over medium to medium-high heat until the oil reaches approximately 350°F (175°C).
If you don’t have a thermometer, drop a tiny bit of the coating into the oil. It should immediately sizzle without burning.
5. Fry the Tomatoes
Carefully place the coated tomato slices into the hot oil.
Don’t overcrowd the skillet. Fry in batches if necessary.
Cook for approximately 2–3 minutes per side, or until deeply golden brown and crispy.
Adjust the heat as needed to prevent the coating from browning too quickly.
6. Drain
Transfer the fried tomatoes to a wire rack placed over a baking sheet or a plate lined with paper towels.
Sprinkle lightly with additional salt while they’re still hot.
A wire rack is ideal because it allows air to circulate underneath, helping the bottoms remain crisp.
Make the Dipping Sauce
While the tomatoes are frying, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, garlic powder, paprika, parsley, salt, and black pepper.
Refrigerate until ready to serve.
Tips for Extra-Crispy Fried Green Tomatoes
Choose firm tomatoes: They should be completely green and firm to the touch.
Don’t skip drying: Excess moisture can cause the coating to fall off.
Use cornmeal: It provides the classic crunchy texture.
Keep the oil hot: If the oil isn’t hot enough, the tomatoes can absorb too much oil and become greasy.
Don’t overcrowd the pan: Too many slices at once can lower the oil temperature.
Serve immediately: Fried green tomatoes are at their crispiest when they’re fresh from the skillet.
Air Fryer Method
For a lighter version, spray the coated tomato slices generously with cooking spray.
Place them in a single layer in an air fryer basket.
Cook at 400°F (200°C) for 8–10 minutes, flipping halfway through, until golden and crispy.
