Ingredients

- ¼ cup (50 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- ¼ cup (60 ml) sour cream
For the Pecan Topping
- 1 cup (110 g) pecan halves or chopped pecans
- ½ cup (120 ml) light corn syrup
- ½ cup (100 g) packed brown sugar
- 2 large eggs
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon — optional
Directions
1. Prepare the Pie Crust
- In a bowl, whisk together the flour, salt, and sugar.
- Add the cold cubed butter.
- Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Add ice water, one tablespoon at a time, mixing gently until the dough comes together.
- Form the dough into a disk, wrap it, and refrigerate for 30–60 minutes.
2. Prepare the Crust
- Preheat your oven to 350°F (175°C).
- Roll the chilled dough into a circle slightly larger than your 9-inch pie dish.
- Carefully transfer it to the dish and gently press it into the bottom and sides.
- Trim the edges and crimp them decoratively.
- Refrigerate the prepared crust while you make the filling.
3. Make the Cheesecake Layer
- Beat the softened cream cheese and sugar until smooth and creamy.
- Add the egg and vanilla and beat until just combined.
- Mix in the flour and sour cream until smooth.
- Don’t overbeat the mixture once the egg has been incorporated.

4. Make the Pecan Filling

Try to distribute the pecans evenly rather than pouring everything into one spot.
5. Bake
Place the pie on a baking sheet to catch any possible drips.
Bake at 350°F (175°C) for 50–60 minutes.
The edges should be set, while the center should still have a slight jiggle when gently shaken.
If the crust starts browning too quickly, loosely cover the edges with aluminum foil.
6. Cool Completely
Remove the pie from the oven and place it on a wire rack.
