Ingredients
For the Cake
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 4 large eggs
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ cup whole milk
- ¼ cup melted butter
For the Milk Soak
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 1 cup whole milk
- 1 teaspoon vanilla extract
For the Topping
- 1½ cups heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Ground cinnamon or cocoa powder, optional
Directions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish and lightly dust it with flour.
2. Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt.
Set aside.
3. Beat the Eggs and Sugar
In a large bowl, beat the eggs and sugar with an electric mixer for 4–5 minutes, until pale, thick, and fluffy.
Add the vanilla and mix briefly.
4. Combine the Batter
Gradually fold the dry ingredients into the egg mixture.
Add the milk and melted butter, folding gently until just combined.
Don’t overmix, as this can make the cake dense.
5. Bake
Pour the batter into the prepared baking dish.
Bake for 25–30 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
Allow the cake to cool for about 15 minutes.
6. Prepare the Milk Soak
Whisk together the evaporated milk, condensed milk, whole milk, and vanilla extract.
7. Soak the Cake
Using a fork or skewer, poke holes all over the warm cake.
Slowly pour the milk mixture evenly over the entire surface, allowing it to soak into the cake.
Refrigerate for at least 4 hours, preferably overnight.
8. Make the Cream Topping
Beat the heavy whipping cream, powdered sugar, and vanilla until soft-to-medium peaks form.
Spread the whipped cream evenly over the chilled cake.
9. Garnish and Serve
Sprinkle the top with a little cinnamon or cocoa powder if desired.
Cut into squares and serve chilled.
Recipe Tips
- Let the cake absorb the milk mixture slowly for the best texture.
- Refrigerating overnight gives the cake an especially moist and creamy consistency.
- Make sure the sponge is completely baked before adding the milk soak.
- Use cold heavy cream for easier whipping.
- For extra flavor, add a little lemon or orange zest to the cake batter.
- Store covered in the refrigerator for up to 3–4 days.
