Tender lobster medallions coated in a luxurious creamy garlic butter sauce with Parmesan and herbs. This elegant dish comes together quickly and makes a restaurant-style dinner at home.
🦞 Ingredients
- 1½ lbs (680 g) lobster tails, shells removed and meat cut into medallions
- 2 tablespoons olive oil
- 3 tablespoons butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ¼ cup chicken or seafood broth
- 1 tablespoon lemon juice
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon red pepper flakes, optional
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Lemon wedges, for serving
👩🍳 Instructions
1. Prepare the Lobster
Remove the lobster meat from the shells if needed.
Slice the meat into thick medallions, approximately 1 inch thick.
Pat the lobster dry with paper towels and season lightly with paprika, salt, and black pepper.
2. Sear the Lobster
Heat the olive oil in a large skillet over medium-high heat.
Add the lobster medallions and sear for approximately 1–2 minutes per side, just until lightly golden.
Transfer the lobster to a plate.
Don’t fully cook it at this stage, as it will finish cooking in the sauce.
3. Make the Garlic Butter Sauce
Reduce the heat to medium and add the butter to the same skillet.
Add the minced garlic and cook for about 30–60 seconds, until fragrant.
Pour in the seafood broth and scrape up any flavorful browned bits from the bottom of the skillet.
Add the heavy cream, Italian seasoning, black pepper, and red pepper flakes if using.
Bring the sauce to a gentle simmer.
4. Add the Parmesan
Reduce the heat to low.
Gradually stir in the Parmesan cheese until melted and the sauce becomes smooth and creamy.
Add the lemon juice and stir well.
Taste and adjust the salt and pepper if necessary.
5. Finish the Lobster
Return the lobster medallions to the skillet.
Spoon the creamy garlic sauce over the lobster.
Cook gently for another 2–4 minutes, or until the lobster is opaque and cooked through.
Avoid overcooking—the lobster should remain tender rather than rubbery.
6. Garnish and Serve
Sprinkle fresh parsley over the top.
Serve immediately with lemon wedges and plenty of the creamy garlic Parmesan sauce.
⭐ Tips for Perfect Lobster
- Don’t overcook the lobster. It becomes tough and rubbery when cooked too long.
- Pat the lobster dry before searing so it browns nicely.
- Keep the cream sauce at a gentle simmer rather than a vigorous boil.
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- A squeeze of fresh lemon at the end balances the richness of the cream and butter.
- For extra garlic flavor, add another clove or two.
