Chocolate Coconut Ganache Cake

For the Chocolate Cake
- 1¾ cups (220 g) all-purpose flour
- ¾ cup (75 g) unsweetened cocoa powder
- 1½ cups (300 g) granulated sugar
- 1½ teaspoons baking powder

- ½ teaspoon salt
- 2 large eggs
- 1 cup (240 ml) buttermilk
- ½ cup (120 ml) vegetable oil
- 2 teaspoons vanilla extract
- 1 cup (240 ml) hot coffee or hot water
For the Coconut Filling
- 1½ cups (150 g) sweetened shredded coconut
- 1 cup (240 ml) heavy cream
- ¼ cup (50 g) granulated sugar
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Pinch of salt
For the Chocolate Ganache
- 8 oz (225 g) semi-sweet or dark chocolate, finely chopped
- 1 cup (240 ml) heavy cream
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract

1. Prepare the Cake Pans
Preheat your oven to 350°F (175°C).
Grease and line two 9-inch round cake pans with parchment paper.
2. Make the Chocolate Batter
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add the eggs, buttermilk, oil, and vanilla.
Beat until the batter is smooth.
Slowly pour in the hot coffee or water while mixing on low speed.
The batter will be thin—this is normal and helps create a moist cake.
3. Bake the Cake
Divide the batter evenly between the prepared pans.
Bake for approximately 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Don’t overbake.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
4. Make the Coconut Filling
Place the heavy cream, sugar, butter, vanilla, and salt in a saucepan over medium heat.
Stir until the butter melts and the mixture is hot.
Add the shredded coconut.
Cook for 2–3 minutes, stirring constantly, until the mixture thickens slightly.
Remove from the heat and let it cool completely.
5. Make the Ganache
Place the chopped chocolate in a heatproof bowl.
Heat the heavy cream until it is hot and just beginning to steam. Don’t let it boil vigorously.
Pour the hot cream over the chocolate.
Let it stand for 2–3 minutes.
Whisk slowly until smooth and glossy.
Stir in the butter and vanilla.
Allow the ganache to cool until it thickens to a spreadable consistency.
6. Assemble the Cake
Place one cooled cake layer on a serving plate.
Spread the coconut filling evenly over the top.
Place the second cake layer on top.
Pour the chocolate ganache over the cake and gently spread it over the top and sides.
For a dramatic finish, allow some ganache to drip naturally down the sides.
7. Decorate
Sprinkle the top with toasted coconut.
You can also add chocolate shavings, chopped toasted almonds, or extra coconut flakes.
Refrigerate the cake for 30–60 minutes before slicing if you want cleaner layers.
