Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon butter
For the Creamy Sauce
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ½ cup shredded mozzarella cheese
Optional Garnish
- 2 tablespoons chopped fresh parsley
- Extra Parmesan cheese
- A pinch of red pepper flakes
Directions
1. Prepare the Chicken
Pat the chicken breasts dry with paper towels.
If they are very thick, carefully pound them to an even thickness so they cook more evenly.
Season both sides with paprika, garlic powder, onion powder, salt, and black pepper.
2. Sear the Chicken
Heat the olive oil and butter in a large oven-safe skillet over medium-high heat.
Add the chicken breasts and sear for 3–4 minutes per side, until nicely browned.
Transfer the chicken to a plate. It does not need to be completely cooked at this stage.
3. Make the Sauce
Reduce the heat to medium.
Add the minced garlic to the same skillet and cook for about 30 seconds.
Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet.
Stir in the heavy cream, Parmesan, Italian seasoning, paprika, and black pepper.
Simmer gently for 2–3 minutes, stirring until the sauce begins to thicken.
4. Add the Cheese
Stir in the mozzarella until melted and smooth.
Return the chicken breasts to the skillet and spoon some of the sauce over the top.
5. Finish Cooking
Preheat the oven to 375°F (190°C).
Transfer the skillet to the oven and bake for approximately 15–20 minutes, depending on the thickness of the chicken.
The chicken should reach an internal temperature of 165°F (74°C).
6. Garnish and Serve
Remove the skillet from the oven.
Let the chicken rest for 5 minutes.
Sprinkle with fresh parsley and extra Parmesan if desired.
Serve with mashed potatoes, rice, pasta, roasted vegetables, or a fresh green salad.
Recipe Tips
- Pound thick chicken breasts to an even thickness for more consistent cooking.
- Don’t boil the cream sauce aggressively, as gentle simmering helps keep it smooth.
- Freshly grated Parmesan melts more smoothly into the sauce.
- Add sliced mushrooms or spinach for extra flavor and vegetables.
- For a little heat, add red pepper flakes to the sauce.
- You can substitute boneless chicken thighs, adjusting the cooking time as needed.
- Refrigerate leftovers in an airtight container for 3–4 days.
