For the Crust
- 2 cups graham cracker crumbs

For the Cheesecake Filling
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- ½ cup heavy cream
For the Caramel Pecan Topping
- 1 cup caramel sauce
- 1 cup pecan halves or roughly chopped pecans
- 2 tablespoons brown sugar
- 2 tablespoons unsalted butter
- Pinch of salt
Instructions
1. Prepare the Crust
Preheat the oven to 350°F (175°C).
In a bowl, combine the graham cracker crumbs, chopped pecans, sugar, cinnamon, and salt. Pour in the melted butter and mix until the crumbs are evenly moistened.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8–10 minutes, then remove from the oven and allow it to cool slightly.
Reduce the oven temperature to 325°F (165°C).
2. Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
Add the eggs one at a time, mixing on low speed just until incorporated.
Add the sour cream, vanilla, flour, and heavy cream. Mix until smooth, being careful not to overbeat the batter.
Pour the cheesecake mixture over the prepared crust and smooth the top.
3. Bake the Cheesecake
Place the cheesecake in the oven and bake for approximately 55–70 minutes, or until the edges are set while the center still has a slight wobble.
Turn off the oven, crack the door open slightly, and allow the cheesecake to cool inside for about 30 minutes.
Remove it from the oven and let it cool completely at room temperature.
Refrigerate for at least 6 hours, preferably overnight.
4. Prepare the Pecans
Melt the butter in a skillet over medium-low heat.
Add the pecans, brown sugar, and a pinch of salt. Cook for 3–5 minutes, stirring frequently, until the pecans are toasted and coated.
Remove from the heat and allow them to cool.
5. Add the Caramel Topping
Once the cheesecake is completely chilled, carefully remove it from the springform pan.
Pour the caramel sauce over the top, allowing some caramel to drip naturally down the sides.
Scatter the toasted pecans generously over the caramel.
For an extra-decadent finish, drizzle a little additional caramel over the pecans.

- Make sure the cream cheese is completely softened before mixing.
