Cabbage Soup

🥬 Ingredients
- 1 lb (450 g) ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups green cabbage, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 medium potatoes, peeled and diced
- 1 can (14.5 oz / 410 g) diced tomatoes
- 1 can (8 oz / 225 g) tomato sauce
- 6 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 bay leaf
- 1 tablespoon Worcestershire sauce
- 1 cup frozen green beans, optional
- 2 tablespoons fresh parsley, chopped

1. Brown the Beef
Heat a large soup pot or Dutch oven over medium heat.
Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon until browned and cooked through.
Drain excess grease if necessary.
2. Sauté the Vegetables
Add the olive oil, onion, carrots, and celery.
Cook for 4–5 minutes, until the vegetables begin to soften.
Add the minced garlic and cook for another 30 seconds.
3. Add the Cabbage and Potatoes
Stir in the chopped cabbage and diced potatoes.
Cook for about 2–3 minutes, stirring occasionally.
4. Add the Broth and Tomatoes
Pour in the diced tomatoes, tomato sauce, and beef broth.
Add the paprika, Italian seasoning, salt, black pepper, bay leaf, and Worcestershire sauce.
Stir everything together.
5. Simmer
Bring the soup to a gentle boil.
Reduce the heat to low, cover, and simmer for approximately 30–40 minutes, or until the cabbage and potatoes are tender.
Add the green beans during the final 10 minutes if using.
Taste and adjust the seasoning as needed.
6. Finish and Serve
Remove the bay leaf.
Ladle the hot soup into bowls and garnish with fresh parsley.
Serve with crusty bread or crackers.
