Buttermilk Texas Sheet Cake
Meta Description: This classic Buttermilk Texas Sheet Cake is incredibly moist, rich, and chocolatey, topped with a smooth fudgy pecan frosting. An easy dessert perfect for gatherings.
If you love rich, old-fashioned chocolate desserts, this Buttermilk Texas Sheet Cake is one recipe you’ll want to keep close. It’s incredibly moist, tender, and packed with deep chocolate flavor. The warm chocolate frosting is poured directly over the freshly baked cake, creating a thin, fudgy layer that melts beautifully into the top.
Buttermilk gives the cake a wonderfully soft texture and a subtle tang that balances the sweetness of the chocolate. Chopped pecans add a delicious crunch, although you can easily leave them out if you prefer a smooth frosting.
Ingredients
For the Cake
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter
- 1 cup water
- ⅓ cup unsweetened cocoa powder
- 2 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
For the Chocolate Frosting
- ½ cup unsalted butter
- ¼ cup unsweetened cocoa powder
- ¼ cup buttermilk
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans, optional
- Pinch of salt
Instructions
1. Prepare the Oven and Pan
Preheat your oven to 350°F (175°C).
Grease and lightly flour a 10×15-inch jelly-roll pan or shallow sheet pan. You can also line the bottom with parchment paper for easier cleanup.
Texas sheet cake is traditionally thin, so avoid using a deep cake pan. The large shallow pan gives the cake its classic texture and shape.
2. Combine the Dry Ingredients
In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, and salt.
Set the mixture aside while you prepare the chocolate mixture.
3. Make the Chocolate Mixture
Place the butter, water, and cocoa powder in a medium saucepan over medium heat.
Stir occasionally until the butter has completely melted and the mixture is smooth. Bring it just to a gentle simmer, then remove it from the heat.
Immediately pour the hot chocolate mixture over the dry ingredients.
Stir gently until everything is combined.
4. Add the Buttermilk Mixture
In a separate bowl, whisk together the eggs, buttermilk, and vanilla extract.
Slowly add this mixture to the chocolate batter, stirring until smooth and evenly combined.
Be careful not to overmix. Stop stirring as soon as there are no visible streaks of flour.
5. Bake the Cake
Pour the batter into the prepared sheet pan and spread it evenly.
Bake for approximately 18–22 minutes, or until the center is set and a toothpick inserted into the middle comes out with a few moist crumbs.
Do not overbake the cake. The goal is a soft, moist texture.
6. Prepare the Frosting
While the cake is baking, prepare the frosting.
In a saucepan, combine the butter, cocoa powder, and buttermilk. Heat over medium heat, stirring until the butter melts and the mixture is smooth.
Remove from the heat and gradually whisk in the powdered sugar.
Add the vanilla extract and a pinch of salt. Stir until the frosting is smooth and glossy.
Fold in the chopped pecans if using.
7. Frost While Warm
As soon as the cake comes out of the oven, pour the warm chocolate frosting over the entire surface.
Use a spatula to spread the frosting evenly from edge to edge.
The warm frosting will begin to set as it cools, creating the classic thin, fudgy topping that makes Texas sheet cake so delicious.
Allow the cake to cool for at least 30–45 minutes before cutting.
Tips for the Best Texas Sheet Cake
Use real buttermilk: It adds moisture and a subtle tang while helping create a tender crumb.
Don’t overbake: Because the cake is thin, it cooks quickly. Start checking it around 18 minutes.
Frost while warm: Pouring the frosting over the warm cake helps it spread easily and creates the signature fudgy finish.
Toast the pecans: For even more flavor, lightly toast the pecans before adding them to the frosting.
Make it nut-free: Simply leave out the pecans. The chocolate frosting is delicious on its own.
How to Store
Store the cooled cake tightly covered at room temperature for up to 3 days. You can also refrigerate it for up to 5 days, although bringing it to room temperature before serving gives it a softer texture.
For longer storage, individual slices can be wrapped well and frozen for up to 2–3 months.
This Buttermilk Texas Sheet Cake is rich, moist, chocolatey, and incredibly easy to make. The combination of tender chocolate cake and warm fudgy frosting makes it a classic dessert that’s perfect for birthdays, holidays, potlucks, and family gatherings.
