Blueberry Donuts
Soft, fluffy, and bursting with juicy blueberries, these homemade blueberry donuts are baked until lightly golden and finished with a sweet blueberry glaze. They’re perfect for breakfast, brunch, or a simple homemade treat.
🫐 Ingredients
For the Donuts
- 1½ cups (190 g) all-purpose flour
- ¾ cup (150 g) granulated sugar
- 1½ teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon, optional
- 2 large eggs
- ½ cup (120 ml) buttermilk
- ¼ cup (60 g) unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
For the Blueberry Glaze
- 1 cup (120 g) powdered sugar
- 2 tablespoons blueberry puree
- 1–2 teaspoons lemon juice
- ½ teaspoon vanilla extract
👩🍳 Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Lightly grease a donut pan with nonstick spray or butter.
2. Combine the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Sugar
- Baking powder
- Baking soda
- Salt
- Cinnamon, if using
Set aside.
3. Mix the Wet Ingredients
In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
Pour the wet mixture into the dry ingredients.
Gently stir until just combined.
Don’t overmix, or the donuts can become dense.
4. Add the Blueberries
Gently fold the blueberries into the batter.
If using frozen blueberries, add them directly from frozen rather than thawing them.
5. Fill the Donut Pan
Transfer the batter to a piping bag or large zip-top bag with the corner snipped off.
Pipe the batter into the donut cavities, filling each approximately ⅔ to ¾ full.
6. Bake
Bake for 12–16 minutes, or until the donuts are lightly golden and a toothpick inserted into a donut comes out clean.
Let them cool in the pan for about 5 minutes, then transfer them to a wire rack.
7. Make the Blueberry Glaze
To make the blueberry puree, mash or blend a few blueberries and strain them if desired.
Whisk the blueberry puree into the powdered sugar.
Add lemon juice and vanilla.
Mix until smooth. If the glaze is too thick, add a few drops of lemon juice or milk.
8. Glaze the Donuts
Once the donuts have cooled completely, dip the tops into the blueberry glaze.
Allow excess glaze to drip off.
Place them on a wire rack and let the glaze set for approximately 10–15 minutes.
⭐ Tips for the Best Blueberry Donuts
- Don’t overmix the batter—gentle mixing keeps the donuts light and tender.
- Fresh blueberries provide excellent flavor, but frozen berries work too.
- Fill the donut pan evenly so all the donuts bake at the same rate.
- Let the donuts cool completely before glazing.
- For a stronger blueberry flavor, add a little extra blueberry puree to the glaze.
- Fresh lemon zest can brighten the blueberry flavor beautifully.
