Ingredients
For the Crust
- 2 cups crushed vanilla wafer cookies
- 5 tablespoons unsalted butter, melted
- 2 tablespoons brown sugar
- ¼ teaspoon salt
For the Banana Layer
- 4 ripe bananas
- 2 tablespoons lemon juice
- 1½ quarts (1.4 L) vanilla or banana ice cream, slightly softened
For the Pecan Caramel Layer
- 1 cup chopped pecans
- 1 cup caramel sauce
- 2 tablespoons brown sugar
- 1 tablespoon butter
- ½ teaspoon cinnamon
- ¼ teaspoon salt
For the Topping
- 1½ cups heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- ½ cup chopped toasted pecans
- Extra caramel sauce, for drizzling
- Banana slices, optional
Directions
1. Prepare the Crust
Preheat the oven to 350°F (175°C).
Combine the crushed vanilla wafers, melted butter, brown sugar, and salt.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8–10 minutes.
Allow the crust to cool completely.
2. Toast the Pecans
Spread the chopped pecans on a baking sheet.
Toast at 350°F (175°C) for about 6–8 minutes, stirring once, until fragrant.
Watch carefully because pecans can burn quickly.
3. Make the Pecan Caramel Mixture
Melt the butter in a small saucepan over medium-low heat.
Add the toasted pecans, brown sugar, cinnamon, and salt.
Cook for about 2 minutes, stirring constantly.
Remove from the heat and let cool slightly.
Mix in about ½ cup of the caramel sauce.
4. Prepare the Bananas
Slice the bananas.
Toss them gently with the lemon juice to help prevent browning.
For a smoother banana flavor, mash two bananas and leave the remaining two sliced.
5. Assemble the First Layer
Spread half of the softened ice cream over the cooled crust.
Add half of the banana slices or mashed banana.
Drizzle with some caramel sauce.
Sprinkle with half of the pecan caramel mixture.
6. Add the Second Layer
Spread the remaining softened ice cream over the first layer.
Top with the remaining banana and pecan caramel mixture.
Drizzle with additional caramel sauce.
Smooth the top gently with a spatula.
7. Freeze
Cover the cake tightly with plastic wrap or foil.
Freeze for at least 6 hours, preferably overnight, until completely firm.
8. Make the Whipped Cream
Before serving, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
Spread or pipe the whipped cream around the top of the cake.
9. Finish and Serve
Sprinkle with toasted pecans.
Drizzle generously with caramel sauce.
Let the cake sit at room temperature for approximately 10–15 minutes before slicing.
Use a warm knife to cut clean slices.
Recipe Tips
- Choose ripe but firm bananas for the best flavor and texture.
- Don’t add warm pecan caramel directly to the ice cream; allow it to cool first.
- Soften the ice cream just enough to spread easily without letting it melt completely.
- Freeze the cake thoroughly between assembly and serving.
- For extra crunch, add crushed vanilla wafers between the layers.
- A pinch of flaky sea salt over the caramel creates a delicious sweet-and-salty contrast.
- Store the covered cake in the freezer for up to 1 week for the best texture.
