Ingredients
For the Salmon Rolls
- 4 salmon fillets, skinless and boneless
- 1 cup ricotta cheese
- ½ cup freshly grated Parmesan cheese
- 1 cup asparagus, trimmed and cut into small pieces
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
For the Lemon Herb Sauce
- 2 tablespoons butter
- 2 cloves garlic, minced
- ½ cup chicken or vegetable broth
- ½ cup heavy cream
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons Parmesan cheese
- 1 tablespoon fresh parsley
- Salt and black pepper, to taste
Instructions
1. Prepare the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a baking dish with olive oil or butter.
2. Prepare the Asparagus
Bring a small pot of water to a boil.
Add the asparagus and blanch for approximately 2 minutes. Immediately transfer it to a bowl of ice water to stop the cooking process.
Drain thoroughly and pat dry.
This quick blanching keeps the asparagus bright green and slightly crisp while ensuring it cooks perfectly inside the salmon rolls.
3. Make the Ricotta Filling
In a medium bowl, combine the ricotta, Parmesan, minced garlic, parsley, dill, lemon zest, lemon juice, Italian seasoning, salt, and black pepper.
Stir until creamy and well combined.
The lemon zest gives the filling a bright citrus flavor that complements the richness of the salmon beautifully.
4. Prepare the Salmon
Place each salmon fillet between two pieces of plastic wrap.
Using the flat side of a meat mallet or rolling pin, gently pound the salmon until it is approximately ¼-inch thick.
Be careful not to tear the fillets.
Pat the salmon dry with paper towels and season lightly with salt and black pepper.
5. Fill the Salmon
Spread a thin, even layer of the ricotta mixture over each salmon fillet.
Arrange a few pieces of asparagus near one end of each fillet.
Starting from the asparagus end, carefully roll the salmon into a tight cylinder.
Secure each roll with toothpicks if necessary.
Repeat with the remaining salmon.
6. Bake the Salmon Rolls
Place the salmon rolls seam-side down in the prepared baking dish.
Drizzle lightly with olive oil.
Bake for approximately 18–22 minutes, depending on the thickness of the salmon.
The salmon should be opaque and flake easily with a fork. Avoid overcooking, as salmon can quickly become dry.
7. Prepare the Lemon Herb Sauce
While the salmon is baking, melt the butter in a small saucepan over medium-low heat.
Add the minced garlic and cook for about 30 seconds.
Pour in the broth and heavy cream. Simmer gently for 2–3 minutes.
Stir in the lemon juice, lemon zest, and Parmesan cheese.
Continue cooking gently until the sauce becomes slightly creamy and thickened.
Season with salt and black pepper and stir in the fresh parsley.
8. Serve
Remove the toothpicks from the salmon rolls before serving.
Place one or two salmon rolls on each plate and spoon the creamy lemon herb sauce around and over the top.
Garnish with fresh parsley, dill, lemon zest, and a few thin lemon slices.
Serve immediately with roasted potatoes, rice, steamed vegetables, or a fresh green salad.
Tips for Perfect Salmon Rolls
Choose evenly sized fillets: Similar thickness makes the salmon cook more evenly.
Don’t overfill: A thin layer of ricotta filling makes rolling much easier and prevents the filling from spilling out.
Secure the rolls: Toothpicks make the process easier, but remember to remove them completely before serving.
Use fresh lemon: Fresh lemon juice and zest provide a much brighter flavor than bottled juice.
Don’t overcook: Salmon is best when it remains moist and flakes easily.
Make-Ahead Option
The ricotta filling can be prepared up to one day ahead and refrigerated in an airtight container.
You can also assemble the salmon rolls several hours before cooking. Cover them tightly and refrigerate until you’re ready to bake.
For the best texture, prepare the lemon sauce shortly before serving.
