For the Sandwiches
- 8 slices thick white or brioche bread
- 1½ cups shredded Gruyère cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons Dijon mustard
- 2 tablespoons softened butter
- Fresh parsley or thyme, optional
Directions
1. Cook the Mushrooms
Heat the butter and olive oil in a large skillet over medium-high heat.
Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally.
Once the mushrooms release their moisture and begin turning golden, add the shallot and garlic.
Cook for another 2 minutes.
Season with thyme, salt, and black pepper.
Remove from the heat and set aside.
2. Make the Béchamel
Melt the butter in a small saucepan over medium heat.
Whisk in the flour and cook for about 1 minute.
Gradually pour in the milk while whisking continuously.
Continue cooking for 3–5 minutes, stirring constantly, until the sauce becomes smooth and thick.
Season with salt, pepper, and a small pinch of nutmeg.
Remove from the heat.
3. Prepare the Bread
Preheat your oven to 425°F (220°C).
Lightly butter one side of each bread slice.
Spread a thin layer of Dijon mustard on the opposite side.
Place four slices, mustard-side up, on a parchment-lined baking sheet.
4. Add the Mushroom Filling
Divide the sautéed mushrooms evenly between the four slices.
Sprinkle each sandwich with some shredded Gruyère.
Place the remaining bread slices on top, buttered side facing upward.
5. Add the Béchamel and Cheese
Spread a generous layer of béchamel sauce over the top of each sandwich.
Sprinkle the remaining Gruyère and Parmesan over the béchamel.
The cheese should cover the surface generously so it becomes beautifully golden and bubbly.
6. Bake
Place the sandwiches in the oven and bake for approximately 10–12 minutes, until the cheese has melted.
Switch the oven to broil and cook for another 1–3 minutes, watching carefully, until the tops become golden brown and slightly crisp.
7. Serve
Allow the sandwiches to rest for a couple of minutes before serving.
Garnish with fresh parsley or thyme if desired.
