Sticky BBQ Beef Bites
These Sticky BBQ Beef Bites are tender, juicy pieces of beef coated in a thick, glossy, sweet-and-savory barbecue glaze. They’re perfect as an appetizer, party snack, or easy dinner served over rice, mashed potatoes, or roasted vegetables.
Ingredients
For the Beef
- 1½ pounds beef chuck, sirloin, or tender steak
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon smoked paprika
- 2 tablespoons cornstarch
For the Sticky BBQ Sauce
- ¾ cup barbecue sauce
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- ½ teaspoon smoked paprika
- ¼ teaspoon chili flakes, optional
- 2 tablespoons water
For Garnishing
- 1 tablespoon chopped fresh parsley
- 1–2 green onions, thinly sliced
- Sesame seeds, optional
Directions
1. Prepare the Beef
Trim away any large pieces of fat or tough connective tissue from the beef.
Cut the beef into bite-sized pieces, approximately 1–1½ inches in size.
Try to cut the pieces as evenly as possible so they cook at the same rate.
Pat the beef dry with paper towels. This is important because dry beef browns much better.
2. Season the Beef
Place the beef pieces in a large bowl.
Add the garlic powder, paprika, onion powder, black pepper, salt, and smoked paprika.
Toss thoroughly until every piece is evenly coated.
Sprinkle the cornstarch over the seasoned beef and toss again.

- Water
Mix until smooth.
Set aside.
4. Sear the Beef
Heat the olive oil in a large skillet over medium-high heat.
When the pan is hot, add the beef pieces in a single layer.
Don’t overcrowd the skillet. Cook in batches if necessary.
Sear the beef for approximately 2–3 minutes per side, turning occasionally, until the outside is deeply browned.
The goal at this stage is to create a flavorful crust rather than completely cook the beef through.
Transfer the browned beef to a plate.
5. Make the BBQ Glaze
Reduce the heat to medium-low.
Pour the prepared BBQ sauce mixture into the same skillet.
Use a wooden spoon to scrape up the browned bits from the bottom of the pan. These add a lot of flavor to the sauce.
Bring the sauce to a gentle simmer.
Cook for approximately 3–5 minutes, stirring frequently, until it begins to thicken and become glossy.
6. Return the Beef to the Pan
Add the seared beef bites back into the skillet.
Toss them thoroughly in the BBQ sauce.
Continue cooking for another 5–8 minutes, stirring and turning the beef frequently.
The sauce should become thick, sticky, and glossy, coating every piece of beef.
Cook until the beef reaches your desired doneness and the center is safely cooked for the cut of beef you’re using.
7. Caramelize the Sauce
For especially sticky BBQ bites, allow the sauce to cook for another 1–2 minutes over medium-low heat.
Stir constantly during this stage because the honey and brown sugar can burn quickly.
The sauce should cling tightly to the beef rather than pooling around it.
8. Garnish
Turn off the heat.
Sprinkle the beef bites with chopped parsley and sliced green onions.
Add a small sprinkle of sesame seeds if desired.
Serve immediately while the sauce is hot and glossy.
Air Fryer Method
For an extra-crispy version:
- Cut and season the beef as directed.
- Toss with cornstarch.
- Preheat the air fryer to 400°F (200°C).
- Lightly spray the basket with oil.
- Arrange the beef in a single layer.
- Air fry for approximately 8–12 minutes, shaking the basket halfway through.
- Meanwhile, prepare the BBQ sauce in a saucepan.
- Toss the cooked beef with the hot sauce.
- Return the coated beef to the air fryer for 1–2 minutes to caramelize the glaze.
