Air-Fried Crispy Cauliflower
This Air-Fried Crispy Cauliflower is golden, crunchy on the outside, tender inside, and packed with savory seasoning. It’s an easy side dish, snack, or appetizer that comes together quickly without deep frying.
Ingredients
- 1 large head cauliflower
- 2 tablespoons olive oil
- ½ cup all-purpose flour
- ½ cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon Italian seasoning
- ¼ teaspoon chili powder, optional
- ½ cup cold water
- ½ cup breadcrumbs or panko
- Cooking spray
Optional Dipping Sauce
- ½ cup mayonnaise
- 2 tablespoons plain yogurt
- 1 tablespoon lemon juice
- 1 small garlic clove, minced
- ¼ teaspoon paprika
- Pinch of salt
Directions
1. Prepare the cauliflower
Wash the cauliflower thoroughly and pat it completely dry.
Cut it into small-to-medium florets, keeping the pieces roughly the same size so they cook evenly.
Avoid making the florets too large because the outside may become crispy before the center becomes tender.
2. Make the coating
In a large bowl, combine:
- Flour
- Cornstarch
- Garlic powder
- Paprika
- Onion powder
- Black pepper
- Salt
- Italian seasoning
- Chili powder
Slowly add the cold water while whisking.
Continue mixing until you have a smooth, thick batter that can coat the cauliflower without being overly runny.
3. Coat the cauliflower
Add the cauliflower florets to the batter.
Toss gently until every piece is well coated.
Let the coated cauliflower sit for about 5 minutes so the batter adheres properly.
4. Add the crispy coating
Place the breadcrumbs or panko in a shallow bowl.
Take each battered cauliflower piece and roll it lightly in the breadcrumbs.

5. Preheat the air fryer

Place the coated cauliflower pieces in the basket in a single layer.
Don’t overcrowd the basket.
Leave some space between the florets so hot air can circulate around them.
If necessary, cook in batches.
Lightly spray the tops of the cauliflower with cooking spray or brush them with a small amount of olive oil.
7. Air fry
Air fry at 400°F (200°C) for 12–16 minutes.
After about 7–8 minutes, shake the basket or carefully turn the cauliflower pieces.
Continue cooking until the coating is deep golden brown and crispy and the cauliflower inside is tender.
Depending on the size of the florets and your air fryer, you may need an additional 2–4 minutes.
8. Make the dipping sauce
While the cauliflower cooks, combine the mayonnaise, yogurt, lemon juice, minced garlic, paprika, and salt.
Stir until smooth.
Taste and adjust the seasoning to your preference.
9. Serve immediately
Transfer the crispy cauliflower to a serving plate.
Serve immediately with the dipping sauce.
For extra flavor, sprinkle with fresh parsley, Parmesan cheese, or a little chili powder.
