Chocolate Oat & Apple Bars
These Chocolate Oat & Apple Bars are soft, chewy, lightly spiced, and packed with tender apple and chocolate flavor. They’re perfect for breakfast, an afternoon snack, or a simple homemade treat.
Ingredients
For the Bars
- 1½ cups old-fashioned rolled oats
- 1 cup all-purpose flour
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
- ½ cup unsalted butter, melted
- 1 large egg
- 1 medium apple, peeled, cored, and finely diced
- ½ cup chocolate chips
- 2 tablespoons milk
Optional Topping
- ¼ cup chocolate chips
- 2 tablespoons chopped walnuts or pecans
- 1 tablespoon rolled oats
Directions
1. Prepare the oven and pan
Preheat your oven to 350°F (175°C).
Line an 8×8-inch baking pan with parchment paper, leaving a little paper hanging over the sides. This makes the finished bars much easier to remove.
Lightly grease the parchment paper.
2. Prepare the apple
Peel and core the apple.
Cut it into very small pieces. Finely diced apple works best because it distributes evenly throughout the bars and becomes tender during baking.
If the apple is particularly juicy, gently pat the pieces dry with a paper towel.
3. Mix the dry ingredients
In a large bowl, combine:
- Rolled oats
- Flour
- Brown sugar
- Granulated sugar
- Baking powder
- Cinnamon
- Salt
Whisk everything together until evenly distributed.
4. Mix the wet ingredients
In another bowl, whisk together the melted butter, egg, vanilla extract, and milk.
Make sure the melted butter has cooled slightly before adding the egg so it doesn’t cook the egg.
5. Combine the mixtures
Pour the wet ingredients into the dry ingredients.
Stir gently with a spatula until just combined.
The mixture will be thick.
Don’t overmix, as this can make the bars dense.
6. Add the apple and chocolate
Fold in the diced apple and ½ cup chocolate chips.
Mix just enough to distribute them evenly throughout the batter.
7. Transfer to the pan
Spread the mixture evenly into the prepared baking pan.
Use the back of a spatula or spoon to press the batter into an even layer.
Sprinkle the remaining chocolate chips, extra oats, and chopped nuts over the top if using.
8. Bake
Place the pan in the preheated oven.
Bake for approximately 25–32 minutes.
The edges should be lightly golden and the center should look set.
Insert a toothpick into the center. It should come out with a few moist crumbs but not wet batter.
Be careful not to overbake—the bars will continue to firm up as they cool.
9. Cool completely
Remove the pan from the oven and place it on a wire rack.
Allow the bars to cool for at least 20–30 minutes.
For cleaner slices, let them cool completely before cutting.
Use the parchment paper to lift the entire slab from the pan, then cut into squares or rectangles.
Optional Chocolate Drizzle
For an extra chocolate finish:
- Melt ½ cup chocolate chips with 1 teaspoon butter or coconut oil.
- Stir until smooth.
- Drizzle over the cooled bars.
- Allow the chocolate to set before serving.
Helpful Tips
Choose the right apple: Honeycrisp, Gala, Fuji, or Granny Smith all work well.
For extra chocolate flavor: Use semi-sweet or dark chocolate chips and add 1 tablespoon unsweetened cocoa powder to the dry ingredients.
For softer bars: Don’t overbake them. The center should be just set when they come out of the oven.
For a healthier-style version: Reduce the brown sugar slightly and use unsweetened applesauce for part of the butter.
For extra crunch: Add chopped walnuts or pecans to the batter.
Storage
Store the cooled bars in an airtight container at room temperature for 2–3 days.
For longer storage, refrigerate them for up to 5 days.
You can also freeze individually wrapped bars for up to 2 months. Thaw at room temperature before serving.
These bars are especially delicious slightly warmed, when the chocolate becomes soft and melty and the apple-oat mixture is wonderfully chewy.
