Directions
1. Prepare the oven
Preheat your oven to 400°F (200°C).
Lightly grease a large baking dish or oven-safe skillet.
2. Prepare the fajita seasoning
In a small bowl, combine the chili powder, paprika, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, black pepper, and cayenne pepper.
Mix well.
3. Season the chicken
Pat the chicken breasts dry with paper towels.
Rub each chicken breast with olive oil, then generously coat both sides with the fajita seasoning.
For thicker chicken breasts, gently pound them to an even thickness. This helps them cook evenly.
4. Prepare the vegetables
Place the sliced bell peppers and onions in a large bowl.
Add the olive oil, minced garlic, salt, and black pepper.
Toss until the vegetables are evenly coated.
Spread them around the chicken in the prepared baking dish.
5. Bake the chicken
Place the seasoned chicken breasts in the center of the baking dish.
Bake uncovered for approximately 20–25 minutes, depending on the thickness of the chicken.
The chicken should reach an internal temperature of 165°F (74°C) at the thickest part.
6. Add the cheese
Remove the baking dish from the oven.
Generously sprinkle the cheddar, Monterey Jack, and mozzarella over the chicken and vegetables.
Return the dish to the oven and bake for another 5–7 minutes, until the cheese is completely melted and bubbling.
For a golden, slightly browned cheese topping, switch the oven to broil for 1–2 minutes, watching carefully.
7. Rest and garnish
Remove the chicken from the oven and let it rest for 5 minutes.
Sprinkle with fresh chopped cilantro and serve with lime wedges.

Tips for Juicy Fajita Chicken
- Don’t overcook the chicken. Use a meat thermometer for the most reliable result.
- Pound thick chicken breasts to an even thickness.
- Allow the chicken to rest before slicing so the juices redistribute.
- For extra flavor, marinate the seasoned chicken for 30 minutes to 4 hours before baking.
- Use freshly shredded cheese for the smoothest melting.
- Add sliced mushrooms or zucchini for extra vegetables.
Make It Extra Creamy
For a creamy version, spread 2–3 tablespoons of cream cheese or sour cream over each chicken breast before adding the shredded cheese. The result is rich, creamy, and incredibly satisfying.
