Fried Chicken Liver
Crispy on the outside, tender and flavorful inside, fried chicken liver is a classic comfort-food dish. A simple seasoned flour coating gives the livers a golden crust while keeping the center juicy.
Ingredients
For the Chicken Liver
- 1 lb (450 g) fresh chicken livers
- 1 cup buttermilk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp onion powder
- ¼ tsp cayenne pepper — optional
For the Coating
- 1½ cups all-purpose flour
- ½ cup cornmeal — optional, for extra crunch
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- ½ tsp salt
- ¼ tsp cayenne pepper — optional
For Frying
- Vegetable or canola oil, enough for about 1½–2 inches in the pan
For Serving
- Lemon wedges
- Fresh parsley
- Gravy, hot sauce, or ranch dressing
👩🍳 Instructions
1. Clean the Chicken Livers
Place the chicken livers in a colander and rinse briefly under cold running water.
Trim away any visible connective tissue, membranes, or greenish portions.
Pat the livers very dry with paper towels.
Cut larger pieces in half so they cook evenly.
2. Marinate
Place the livers in a bowl.
Add the buttermilk, salt, black pepper, garlic powder, paprika, onion powder, and cayenne.
Mix well.
Cover and refrigerate for 30 minutes to 2 hours.
The buttermilk helps tenderize the livers and reduces some of their strong flavor.
3. Prepare the Flour Coating
In a shallow bowl, combine:
- Flour
- Cornmeal
- Paprika
- Garlic powder
- Onion powder
- Black pepper
- Salt
- Cayenne
Mix thoroughly.
4. Coat the Livers
Remove the livers from the buttermilk mixture, allowing excess liquid to drip off.
Dredge each piece thoroughly in the seasoned flour.
For an extra-crispy coating, dip the floured liver back into the buttermilk and coat it in the flour a second time.
Shake off excess flour.
5. Heat the Oil
Heat the oil in a heavy skillet or deep pan to approximately 350°F (175°C).
Don’t overcrowd the pan.
6. Fry
Carefully place the coated chicken livers into the hot oil.
Fry for approximately 3–5 minutes per side, depending on their size.
Turn carefully with tongs to avoid splashing hot oil.
Chicken liver should reach an internal temperature of 165°F (74°C) for food safety.
7. Drain
Transfer the cooked livers to a wire rack or a plate lined with paper towels.
Sprinkle lightly with salt while they’re still hot.
Let them rest for a couple of minutes.

Ingredients
- 1 large onion, thinly sliced
- 2 tbsp butter
- 2 tbsp flour
- 2 cups beef or chicken broth
- ½ tsp black pepper
- Salt to taste
Method
- Melt butter in a skillet.
- Add sliced onions and cook for 8–10 minutes until softened and golden.
- Sprinkle in flour and stir for 1 minute.
- Slowly whisk in the broth.
- Add black pepper and simmer for 5–7 minutes until thickened.
- Spoon the gravy over the fried chicken livers.
