Cheesy Beef Stuffed Rolls
These Cheesy Beef Stuffed Rolls are soft, golden, and filled with juicy seasoned ground beef and plenty of melted cheese. They’re perfect for dinner, lunch, parties, or as a hearty grab-and-go snack.
Ingredients
For the Dough
- 3 cups all-purpose flour
- 2¼ tsp active dry yeast
- 1 tbsp sugar
- 1 tsp salt
- 1 cup warm milk
- 2 tbsp melted butter
- 1 large egg
For the Beef Filling
- 1 lb (450 g) ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ green bell pepper, finely diced
- 1 tsp paprika
- ½ tsp cumin powder
- ½ tsp onion powder
- ½ tsp black pepper
- ½ tsp salt
- 1 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 2 tbsp chopped fresh parsley
For Brushing
- 1 egg, beaten
- 1 tbsp sesame seeds — optional
👩🍳 Instructions
1. Make the Dough
Combine the warm milk, sugar, and yeast in a bowl.
Let it stand for 5–10 minutes, until foamy.
Add the melted butter and egg.
Gradually add the flour and salt, mixing until a soft dough forms.
Transfer to a lightly floured surface and knead for 6–8 minutes, until smooth and elastic.
Place the dough in a lightly greased bowl.
Cover and let it rise in a warm place for approximately 1 hour, or until doubled in size.
🥩 2. Prepare the Beef Filling
Heat olive oil in a large skillet over medium-high heat.
Add the chopped onion and bell pepper.
Cook for 3–4 minutes, until softened.
Add the garlic and cook for another 30 seconds.
Add the ground beef.
Cook until browned, breaking it apart with a wooden spoon.
Drain excess fat if necessary.
Add:
- Paprika
- Cumin
- Onion powder
- Black pepper
- Salt
- Ketchup
- Worcestershire sauce
Stir well and cook for another 2–3 minutes.
Remove from the heat and allow the filling to cool slightly.
Stir in the parsley.
🧀 3. Add the Cheese
Once the beef mixture is warm rather than piping hot, mix in the mozzarella and cheddar.
The cheese should begin to soften but shouldn’t completely disappear into the filling.
🥖 4. Shape the Rolls
Preheat your oven to 375°F (190°C).
Punch down the risen dough.
Divide it into 10–12 equal portions.
Roll each portion into a small circle or oval.
Place approximately 2–3 tablespoons of beef filling in the center.
Fold the dough around the filling and pinch the edges firmly to seal.
Place each roll seam-side down on a parchment-lined baking sheet.
Leave a little space between the rolls.
🥚 5. Add the Egg Wash
Brush the tops with beaten egg.
Sprinkle with sesame seeds if desired.
For extra cheese flavor, you can also sprinkle a little Parmesan over the tops.
6. Bake
Bake for 18–22 minutes, or until the rolls are puffed and beautifully golden brown.
Remove from the oven and brush lightly with melted butter while still warm.
Let them cool for 5 minutes before serving.

- 1 chopped jalapeño
- ½ tsp chili flakes

Replace the ketchup with 2 tbsp BBQ sauce.

- A little mustard
