These Air Fryer Garlic Butter Steak Bites and Potatoes are crispy on the outside, tender on the inside, and coated in a delicious garlic butter sauce. It’s a quick, satisfying dinner that comes together in one air fryer with minimal cleanup.
Ingredients
For the Steak & Potatoes
- 1 lb (450 g) sirloin steak, cut into 1-inch cubes
- 1 lb (450 g) baby potatoes, cut into small cubes
- 1½ tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes — optional
For the Garlic Butter
- 3 tbsp unsalted butter
- 4 cloves garlic, finely minced
- 1 tbsp fresh parsley, chopped
- 1 tsp lemon juice
- Pinch of salt

1. Prepare the Potatoes
Wash the potatoes and cut them into small, evenly sized pieces.
Place them in a bowl and toss with olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
2. Preheat the Air Fryer
Preheat your air fryer to 400°F (200°C) for about 3–5 minutes.
Preheating helps the potatoes develop a crispy exterior.
3. Cook the Potatoes
Place the potatoes in the air fryer basket.
Don’t overcrowd them—cook in batches if necessary.
Air fry for 10–12 minutes, shaking the basket halfway through.
4. Season the Steak
While the potatoes cook, pat the steak bites dry with paper towels.
Toss them with a little olive oil, salt, black pepper, and the remaining seasoning.
5. Add the Steak
After the potatoes have cooked for 10–12 minutes, add the steak bites to the basket.
Air fry everything together for another 6–8 minutes, shaking the basket halfway through.

6. Make the Garlic Butter
While everything cooks, melt the butter in a small saucepan over low heat.
Add the minced garlic.

Transfer the cooked steak and potatoes to a large bowl.
