Chocolate-Topped Oat & Raisin Granola
Crunchy toasted oats, sweet chewy raisins, warm cinnamon, and a smooth layer of chocolate come together in this delicious homemade granola. It makes a wonderful breakfast with milk or yogurt and is also perfect for snacking. Baking the oat mixture first and adding chocolate afterward helps keep the chocolate topping distinct and glossy.
Ingredients
For the Granola
- 3 cups old-fashioned rolled oats
- ¾ cup raisins
- ½ cup chopped almonds or walnuts — optional
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ tsp vanilla extract
- ⅓ cup honey or maple syrup
- ¼ cup melted butter or coconut oil
- 2 tbsp brown sugar
- 2 tbsp unsweetened cocoa powder
For the Chocolate Topping
- 5 oz (140 g) semi-sweet or dark chocolate
- 1 tsp coconut oil or butter
- ½ tsp vanilla extract — optional

1. Prepare the Oven
Preheat your oven to 325°F (165°C).
Line a large baking sheet with parchment paper.
2. Mix the Dry Ingredients
In a large bowl, combine:
- Rolled oats
- Cinnamon
- Salt
- Chopped nuts, if using
- Cocoa powder
Mix well.
3. Make the Sweet Mixture
In a small saucepan, gently heat the melted butter, honey, and brown sugar.
Stir until the mixture is smooth and the sugar has mostly dissolved.
Remove from the heat and stir in the vanilla.
4. Coat the Oats
Pour the warm mixture over the oats.
Stir thoroughly until every oat is lightly coated.
Spread the mixture evenly over the prepared baking sheet.
For larger crunchy clusters, press the mixture down firmly into an even layer.
5. Bake
Bake for 25–30 minutes.

6. Add the Raisins
Remove the granola from the oven.
Allow it to cool for about 10 minutes, then sprinkle the raisins over the top.
For softer, chewier raisins, add them after baking rather than roasting them the entire time.
Let the granola cool completely.

7. Melt the Chocolate
Place the chocolate and coconut oil in a heatproof bowl.
Melt gently over a double boiler or microwave in 15–20 second intervals, stirring between each interval.
Continue until completely smooth.
Stir in vanilla if desired.
8. Add the Chocolate
Once the granola has cooled completely, drizzle the melted chocolate generously over the top.
For a thicker chocolate layer, spread it evenly across the entire surface.
Let the chocolate set at room temperature or refrigerate for 20–30 minutes.
9. Break Into Clusters
Once the chocolate has hardened, break the granola into chunky pieces.
Store in an airtight container.
