This creamy baked asparagus casserole is a comforting side dish made with tender asparagus, a rich garlic cream sauce, melted cheese, and a crispy golden topping. It works beautifully alongside roasted chicken, steak, pork chops, or baked ham.
🥬 Ingredients
For the Casserole
- 1½ lb (680 g) fresh asparagus
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp all-purpose flour
- 1 cup whole milk
- ½ cup heavy cream
- 3 oz (85 g) cream cheese, softened
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp paprika
- ¼ tsp red pepper flakes — optional
- 1 tbsp fresh lemon juice
For the Crispy Topping
- ½ cup panko breadcrumbs
- 2 tbsp melted butter
- 2 tbsp grated Parmesan cheese
- ½ tsp garlic powder
For Garnishing
- Fresh parsley
- Extra Parmesan
- Lemon zest
👩🍳 Instructions
1. Prepare the Asparagus
Preheat your oven to 400°F (200°C).
Wash the asparagus and trim away the tough woody ends.
Cut the asparagus into pieces about 2 inches long.
For particularly thick asparagus, blanch it in boiling water for 1–2 minutes, then transfer it immediately to cold water and drain well. This helps it stay tender but not mushy.
2. Make the Creamy Sauce
Melt the butter in a saucepan over medium heat.
Add the minced garlic and cook for about 30 seconds, just until fragrant.
Whisk in the flour and cook for about 1 minute.
Slowly pour in the milk while whisking continuously to prevent lumps.
Add the heavy cream.
Cook for 2–3 minutes, stirring, until the sauce begins to thicken.
Reduce the heat to low.
Add the cream cheese, Parmesan, salt, black pepper, paprika, and red pepper flakes.
Stir until the cream cheese and Parmesan have melted into a smooth sauce.
Remove from the heat and stir in the lemon juice.
3. Assemble the Casserole
Lightly grease a 9×13-inch baking dish.
Arrange the asparagus evenly in the dish.
Pour the creamy sauce over the asparagus.
Gently toss or spread the sauce so the asparagus is well coated.
Sprinkle the mozzarella evenly over the top.
4. Prepare the Crispy Topping
In a small bowl, combine:
- Panko breadcrumbs
- Melted butter
- Parmesan
- Garlic powder
Mix until the breadcrumbs are evenly coated.
Sprinkle the mixture over the casserole.
5. Bake
Place the casserole in the preheated oven.
Bake uncovered for 20–25 minutes, until the asparagus is tender and the sauce is bubbling around the edges.
For an extra-golden topping, switch to the broiler for the final 1–2 minutes, watching closely so the breadcrumbs don’t burn.
6. Rest and Serve
Remove the casserole from the oven and let it rest for about 5 minutes.
Garnish with fresh parsley, Parmesan, and a little lemon zest.
Serve warm.
🧀 Extra-Cheesy Version
For an even richer casserole, add:
- ½ cup shredded Gruyère
- ½ cup extra mozzarella
- 2 tbsp Parmesan on top
A combination of Parmesan, Gruyère, and mozzarella gives a particularly creamy, bubbly finish.
🥓 Bacon Asparagus Casserole
Add ½ cup cooked, crumbled bacon to the asparagus before pouring over the cream sauce.
The smoky bacon pairs especially well with the creamy cheese sauce.
🍗 Make It a Main Dish
Add 1½ cups cooked shredded chicken or diced cooked ham to turn this vegetable casserole into a more substantial meal. Ham and asparagus are also a classic combination in creamy baked dishes.
⭐ Tips for the Best Casserole
- Use fresh, firm asparagus when possible.
- Don’t overcook the asparagus before baking.
- Let the sauce thicken slightly before adding it to the dish.
- Freshly grated Parmesan melts more smoothly.
- Keep the breadcrumbs on top rather than mixing them into the sauce so they stay crispy.
- Let the casserole rest for a few minutes before serving.
