Homemade Fresh Cheese
This easy homemade cheese is soft, creamy, slightly tangy, and requires only a few basic ingredients. It’s similar to a simple farmer’s cheese/paneer-style fresh cheese and is delicious in sandwiches, salads, wraps, or served with bread.
Ingredients
- 2 liters (8 cups) whole milk
- 4–5 tbsp fresh lemon juice or white vinegar
- ½ tsp salt, or to taste
- 2 tbsp heavy cream — optional, for a creamier texture
Instructions
1. Heat the Milk
Pour the milk into a large heavy-bottomed pot.
Heat over medium heat, stirring occasionally so it doesn’t scorch.
Bring the milk to about 185–195°F (85–90°C)—it should be very hot and steaming, but avoid a vigorous boil.
2. Add the Acid
Turn off the heat.
Add 4 tablespoons lemon juice gradually while stirring gently.
Within a minute or two, the milk should begin separating into:
- White curds
- Yellowish-green whey
If the milk hasn’t separated after 1–2 minutes, add another tablespoon of lemon juice or vinegar.
3. Let It Rest
Stop stirring and let the mixture sit for 5–10 minutes.
The curds should become clearly separated from the whey.
4. Strain the Cheese
Place a fine-mesh strainer over a large bowl and line it with cheesecloth or a clean, thin kitchen towel.
Carefully pour the curdled milk through the cloth.
Let the whey drain away.
5. Season
Gather the cheesecloth around the curds and gently squeeze out excess whey.
Transfer the cheese to a bowl.
Add salt and mix gently.
For a creamier cheese, mix in 2 tablespoons heavy cream.
6. Choose Your Texture
For soft, spreadable cheese:
Drain for about 20–30 minutes.
For firmer cheese:
Wrap the cheese tightly and place something heavy on top for 1–2 hours.
For paneer-style cheese:
Press it under a heavy weight for 2–3 hours, then cut into cubes.

Garlic & Herb
Mix in:
- 1 minced garlic clove
- Fresh parsley
- Chives
- Black pepper
Spicy Cheese
Add:
- Chopped green chili
- Red pepper flakes
- A pinch of paprika
Creamy Breakfast Cheese
Mix the finished cheese with:
- 1–2 tbsp cream
- Black pepper
- Fresh herbs
Spread it on warm toast or flatbread.
🥛 Don’t Throw Away the Whey!
The leftover whey can be used in:
- Bread dough
- Pancakes
- Soups
- Smoothies
- Cooking rice
It contains protein and other nutrients, so it’s useful rather than simply discarding it.

- Use whole milk for the best yield and texture.
- Avoid ultra-high-temperature (UHT) milk if possible, as it may not curdle well.
- Fresh lemon juice gives a pleasant mild flavor.
- Add the acid gradually rather than all at once.
- Don’t boil the milk aggressively.
- Keep homemade fresh cheese refrigerated and use it within 3–4 days.
