Homemade Cheese Flatbread / Cheese Paratha
Soft, crispy, and cheesy, this homemade cheese paratha is filled with gooey melted cheese and seasoned with herbs and spices. It’s perfect for breakfast, lunch, tea time, or a quick snack.
Ingredients
For the Dough
- 2 cups (250 g) all-purpose flour or atta
- ½ tsp salt
- 1 tbsp oil or melted butter
- ¾ cup warm water, approximately
- 2 tbsp yogurt — optional, for softer paratha
For the Cheese Filling
- 1 cup shredded mozzarella
- ½ cup shredded cheddar cheese
- 1 green chili, finely chopped — optional
- 2 tbsp fresh coriander, chopped
- ½ tsp black pepper
- ½ tsp red chili flakes
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp salt, if needed
For Cooking
- 2–3 tbsp butter or ghee
- Extra flour, for rolling
👩🍳 Instructions
1. Make the Dough
Add flour and salt to a large bowl.
Add the oil and yogurt if using.
Gradually add warm water while mixing until a soft dough forms.
Knead for 5–7 minutes until the dough becomes smooth and elastic.
It should be soft but not sticky.
Cover with a clean kitchen towel and let it rest for 20–30 minutes.
2. Prepare the Cheese Filling
In a bowl, combine:
- Mozzarella
- Cheddar
- Green chili
- Fresh coriander
- Black pepper
- Red chili flakes
- Garlic powder
- Oregano
Mix well.
Tip: Don’t add too much salt because cheddar cheese can already be salty.
3. Divide the Dough
Divide the dough into 6 equal balls.
Take one ball and flatten it slightly.
Dust your work surface with a little flour.
Roll it into a small circle, approximately 5–6 inches wide.
4. Fill the Paratha
Place about 2–3 tablespoons of cheese filling in the center.
Bring the edges of the dough toward the center and pinch them together to completely seal the filling.
Gently flatten the stuffed dough ball.
Let it rest for 2–3 minutes.
5. Roll the Paratha
Dust lightly with flour.
Roll gently into a round or oval paratha about 7–8 inches wide.
Don’t press too hard, or the cheese may break through the dough.
If a small amount of cheese comes through, simply patch the area with a little dough.
6. Cook the Cheese Paratha
Heat a heavy skillet or tawa over medium heat.
Place the paratha on the hot pan.
Cook for approximately 1–2 minutes, until small bubbles appear on the surface.
Flip it.
Brush the cooked side with butter or ghee.
Cook for another 1–2 minutes.
Flip again and brush the other side with butter.
Cook until both sides are golden brown, crispy, and beautifully blistered.
7. Serve Hot
Remove from the skillet and lightly press the edges with a spatula to distribute the melted cheese.
Serve immediately while the cheese is hot and stretchy.
🧀 Extra-Cheesy Version
For an extra cheesy filling, use:
- 1 cup mozzarella
- ½ cup cheddar
- ¼ cup cream cheese
The cream cheese makes the filling especially creamy.
🌶️ Spicy Cheese Paratha
Add:
- 1–2 chopped green chilies
- ½ tsp red chili flakes
- ¼ tsp cayenne pepper
- ½ tsp chaat masala
🧄 Garlic Cheese Paratha
Mix 1 tsp minced garlic and 1 tbsp chopped coriander into the cheese filling. Brush the cooked paratha with garlic butter.

- Keep the dough soft for a tender paratha.
- Always let the dough rest before rolling.
- Don’t overfill—the cheese can leak out while cooking.
- Use low-to-medium heat so the outside doesn’t burn before the cheese melts.
- Mozzarella gives the best cheese stretch.
- Cook the paratha immediately after rolling for the best texture.
