Fluffy Vegetable & Cheese Egg Muffins
These fluffy egg muffins are packed with colorful vegetables and melted cheese. They’re quick, protein-rich, and perfect for breakfast, brunch, meal prep, or a light snack. Whisking the eggs until slightly frothy and avoiding overbaking helps keep them light and tender.
Ingredients
Makes 12 egg muffins
- 8 large eggs
- ⅓ cup (80 ml) milk
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ½ cup red bell pepper, finely diced
- ½ cup yellow or green bell pepper, finely diced
- ¼ cup onion, finely chopped
- 1 cup fresh spinach, finely chopped
- ¼ cup grated carrot
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ¼ tsp paprika
- 1 tbsp fresh parsley, chopped
- Cooking spray or a little oil for the muffin tin
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
Grease a 12-cup muffin tin generously with cooking spray or a little oil.
2. Prepare the Vegetables
Finely chop the bell peppers, onion, and spinach.
If using watery vegetables such as zucchini or mushrooms, sauté them briefly first and allow them to cool. Removing excess moisture helps prevent soggy egg muffins.
3. Whisk the Eggs
Crack the eggs into a large bowl.
Add the milk, salt, black pepper, garlic powder, and paprika.
Whisk vigorously for 1–2 minutes, until the mixture becomes smooth and slightly frothy.
This incorporates air into the eggs and helps produce a fluffier texture.
4. Add the Cheese and Vegetables
Stir in:
- Cheddar
- Mozzarella
- Bell peppers
- Onion
- Spinach
- Carrot
- Fresh parsley
Mix gently until everything is evenly distributed.
5. Fill the Muffin Cups
Divide the mixture evenly among the 12 muffin cups.
Fill each cup about ¾ full, leaving room for the eggs to puff up during baking.
Sprinkle a little extra cheese over the tops if desired.
6. Bake
Place the muffin tin in the preheated oven.
Bake for approximately 18–22 minutes, until the muffins are puffed, lightly golden, and completely set in the center.
Don’t overbake them, as this can make the eggs rubbery.
7. Cool
Remove the muffin tin from the oven and let the muffins rest for 5 minutes.
Run a small knife around the edges if necessary, then gently lift them from the pan.
