🛒 Ingredients
For the Crust
- 2½ cups (250 g) graham cracker crumbs
- ½ cup (115 g) unsalted butter, melted
- 3 tablespoons granulated sugar
- Pinch of salt
For the Pineapple Cream Filling
- 1 can (20 oz / 565 g) crushed pineapple
- 8 oz (225 g) cream cheese, softened
- ½ cup (100 g) granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- 1 cup (240 ml) heavy whipping cream, cold
- ½ cup (60 g) powdered sugar
- 1 teaspoon unflavored gelatin, optional, for a firmer pie
For the Topping
- 1 cup (240 ml) heavy whipping cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
- Pineapple pieces or maraschino cherries, optional
- Toasted coconut, optional
👩🍳 Instructions
1. Prepare the Pineapple
Drain the crushed pineapple very well, pressing it gently through a fine-mesh strainer to remove excess juice.
Set aside.
Don’t skip this step: excess pineapple juice can make the filling watery and prevent the pie from setting properly.
2. Make the Graham Cracker Crust
Combine the graham cracker crumbs, melted butter, sugar, and salt in a bowl.
Mix until the crumbs are evenly moistened.
Press the mixture firmly into the bottom and sides of a 9-inch pie dish.
Refrigerate for 20–30 minutes while preparing the filling.
For an extra-firm crust, you can bake it at 350°F (175°C) for 8–10 minutes, then cool completely. For a completely no-bake version, simply chill it.
🍍 3. Make the Cream Cheese Mixture
Beat the softened cream cheese and granulated sugar until smooth and creamy.
Add the vanilla and lemon juice.
Beat again until completely combined.
Fold in the well-drained crushed pineapple.
4. Whip the Cream
In a separate chilled bowl, beat the cold heavy cream and powdered sugar until medium-stiff peaks form.
Be careful not to overbeat.
Gently fold the whipped cream into the pineapple cream cheese mixture.
❄️ 5. Optional: Make It Extra Firm
If you want a pie that slices very cleanly, dissolve 1 teaspoon unflavored gelatin in 2 tablespoons cold water.
Let it stand for 5 minutes.
Warm gently until dissolved, then allow it to cool slightly.
Mix it into the pineapple cream cheese filling before folding in the whipped cream.
6. Fill the Pie
Spoon the pineapple filling into the chilled crust.
Spread the top evenly with a spatula.
Cover loosely with plastic wrap.
Refrigerate for at least 6 hours, preferably overnight.
The longer chilling time allows the filling to become firm and creamy.
🍦 7. Add the Whipped Cream Topping
Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
Spread or pipe the whipped cream over the chilled pie.
Decorate with:
- Small pineapple pieces
- Toasted coconut
- Maraschino cherries
- Lemon or lime zest
🔪 8. Slice and Serve
For beautifully clean slices, place the pie in the refrigerator for at least 6 hours before serving.
Dip your knife in warm water, wipe it dry, and slice.
Repeat between slices for a neat finish.
Serve cold and creamy.
✨ Tips for the Best Pineapple Cream Pie
- Drain the pineapple extremely well. This is the most important tip.
- Use full-fat cream cheese for the richest texture.
- Make sure the whipping cream is very cold.
- Don’t overmix the whipped cream into the filling.
- For a stronger tropical flavor, add ½ cup toasted coconut.
- A little fresh lime zest gives the filling a delicious bright flavor.
- If you want an even easier version, use a ready-made graham cracker crust.
🥥 Tropical Variation
For a Pineapple Coconut Cream Pie, add:
- ½ cup toasted shredded coconut to the filling
