Old-Fashioned Potato Candy
Old-Fashioned Potato Candy is a surprisingly delicious no-bake treat made with a small amount of mashed potato, powdered sugar, peanut butter, and vanilla. The potato gives the candy a soft, smooth texture without making it taste like potatoes. It’s a nostalgic homemade sweet that is inexpensive, easy, and perfect for holidays.
🛒 Ingredients
For the Candy
- ½ cup (120 g) plain mashed potato, completely cooled
- 4–5 cups (480–600 g) powdered sugar, as needed
- 1 teaspoon vanilla extract
- ½ cup creamy peanut butter
- Pinch of salt
Optional
- ½ teaspoon cinnamon
- ½ cup finely chopped pecans or walnuts
- ½ cup shredded coconut
- Melted chocolate for drizzling
👩🍳 Instructions
1. Prepare the Potato
Peel and boil 1 small potato until completely tender.
Drain very well and mash until perfectly smooth.
Measure ½ cup mashed potato and allow it to cool completely.
Important: Don’t add butter, milk, or cream to the potato. Extra moisture will make the candy difficult to firm up.
2. Make the Dough
Place the cooled mashed potato in a large mixing bowl.
Add the vanilla and salt.
Gradually add the powdered sugar, about ½ cup at a time, mixing after each addition.
At first, the mixture will become surprisingly soft and liquid-like. Keep adding powdered sugar and mixing.
Continue until a thick, soft dough forms.
3. Knead
Dust your work surface with powdered sugar.
Transfer the dough onto the surface and knead gently for 1–2 minutes.
The dough should be soft and pliable but not sticky.
If it’s still sticky, add more powdered sugar a little at a time.
🥜 4. Add the Peanut Butter
Place the dough between two sheets of parchment paper.
Roll it into a rectangle approximately ¼ inch thick.
Spread the peanut butter evenly over the entire surface, leaving a small border around the edges.
5. Roll the Candy
Starting from one long edge, carefully roll the dough into a tight log.
Use the parchment paper to help guide the roll.
Wrap the finished roll tightly in plastic wrap.
❄️ 6. Chill
Refrigerate for at least 1–2 hours, or until firm.
For an even firmer texture, chill it overnight.
🔪 7. Slice and Serve
Remove the chilled roll from the refrigerator.
Using a sharp knife, cut it into ½-inch slices.
Arrange on a serving plate and dust lightly with powdered sugar if desired.
🍫 Chocolate-Dipped Version
For an extra-special treat:
- Melt 1 cup chocolate chips with 1 teaspoon coconut oil.
- Dip each chilled candy slice halfway into the chocolate.
- Place on parchment paper.
- Sprinkle with chopped peanuts or coconut.
- Refrigerate for 15–20 minutes until the chocolate sets.
✨ Tips for Perfect Potato Candy
- Use plain, completely cooled mashed potato.
- Don’t add milk or butter to the potato.
