Ingredients
- 2 cups (300 g) soft pitted dates
- 2Β½ cups (600 ml) water
- 1 teaspoon lemon juice
- Β½ teaspoon vanilla extract, optional
- Pinch of salt, optional
Directions
1. Prepare the Dates
If your dates are firm or dry, place them in a bowl and cover with hot water.
Let them soak for 15β20 minutes.
Drain them well.
Soft dates can be used without soaking.
2. Cook the Dates
Add the dates and water to a saucepan.
Bring to a gentle boil, then reduce the heat.
Simmer for 15β20 minutes, stirring occasionally, until the dates become very soft and the liquid turns dark and fragrant.
3. Blend
Remove from the heat and let the mixture cool slightly.
