Round Coconut Cookies 🥥🍪
These Golden-Brown Round Coconut Cookies are buttery, crisp around the edges, soft and tender in the center, and packed with delicious toasted coconut flavor. They’re simple to make and perfect with tea, coffee, or as an easy homemade treat.
Ingredients
- 1 cup (225 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon coconut extract, optional
- 1½ cups (190 g) all-purpose flour
- 1 cup (85 g) unsweetened shredded coconut
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons milk, if needed
For Finishing
- ¼ cup shredded coconut
- 1 tablespoon granulated sugar, optional
Directions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Set aside.
2. Cream the Butter and Sugar
Place the softened butter and sugar in a large mixing bowl.
Beat for approximately 2–3 minutes, until smooth, creamy, and slightly fluffy.
Don’t use melted butter because it can make the cookies spread too much.
3. Add the Egg and Flavoring
Add the egg and vanilla extract.
Add the coconut extract if using.
Beat until everything is fully combined.
4. Mix the Dry Ingredients
In another bowl, whisk together:
- All-purpose flour
- Baking powder
- Salt
- Shredded coconut
Gradually add the dry ingredients to the butter mixture.
Mix until a soft dough forms.
If the dough seems too dry, add milk 1 teaspoon at a time.
Don’t overmix.
5. Chill the Dough
Cover the dough and refrigerate for 20–30 minutes.
This makes it easier to shape and helps prevent excessive spreading during baking.
6. Shape the Round Cookies
Scoop approximately 1 tablespoon of dough for each cookie.
Roll each portion between your palms to form a smooth ball.
Place the balls on the prepared baking sheet, leaving about 2 inches (5 cm) between them.
Gently flatten each ball with your palm or the bottom of a glass until they are round and about ¼ inch thick.
For a beautiful coconut finish, lightly press shredded coconut onto the tops.
7. Bake
Bake for approximately 10–14 minutes, or until the edges and tops become golden brown.
Keep a close eye on them during the final few minutes because coconut can brown quickly.
8. Cool
Remove the cookies from the oven.
Let them cool on the baking sheet for 5 minutes.
Then transfer them to a wire rack and allow them to cool completely.
They will become crispier around the edges as they cool.

- Do watch carefully near the end of baking to prevent the coconut from burning.
Don’t ❌
- Don’t use melted butter.

- Don’t flatten the cookies too thin.
- Don’t overcrowd the baking sheet.
- Don’t overbake them if you want a tender center.
Tips for Extra Coconut Flavor 🥥
Toast the Coconut
For a deeper flavor, toast the shredded coconut in a dry skillet over medium-low heat for 2–4 minutes, stirring constantly.
Let it cool completely before adding it to the dough.
Make Them Extra Crispy
Flatten the cookies slightly more and bake for an additional 1–2 minutes, watching carefully.
Add Chocolate 🍫
Dip half of each cooled cookie into melted dark or white chocolate.
Sprinkle with coconut before the chocolate sets.
Add a Tropical Twist
Mix 2 tablespoons finely chopped dried pineapple into the dough for a coconut-pineapple version.
Storage
Store completely cooled cookies in an airtight container at room temperature for up to 1 week.
For longer storage, freeze them in an airtight container for up to 2 months.
Place parchment paper between layers to prevent them from sticking.
