Poor Man’s Husband Casserole is an old-fashioned, budget-friendly comfort food made with seasoned ground beef, tender noodles, creamy sauce, and plenty of melted cheese. It’s hearty, filling, and easy enough for a busy weeknight.
Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz (225 g) egg noodles
- 1 can (15 oz) tomato sauce
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley, optional
Directions
1. Cook the Noodles
Bring a large pot of salted water to a boil.
Cook the egg noodles according to the package directions until just al dente.
Drain well and set aside.
2. Brown the Beef
Preheat your oven to 350°F (175°C).
Heat a large skillet over medium-high heat.
Add the ground beef and diced onion.
Cook for 6–8 minutes, breaking up the beef as it cooks, until the beef is browned and the onion is tender.
Drain excess grease if necessary.
Add the minced garlic and cook for another 30 seconds.
3. Make the Sauce
Reduce the heat to medium-low.
Stir in the tomato sauce, cream of mushroom soup, sour cream, Italian seasoning, paprika, black pepper, and salt.
Mix until everything is smooth and heated through.
4. Combine With the Noodles
Add the cooked egg noodles to the skillet.
Gently toss until the noodles are thoroughly coated in the creamy beef sauce.
5. Assemble the Casserole
Lightly grease a 9×13-inch baking dish.
Transfer the noodle mixture into the dish and spread evenly.
Sprinkle the cheddar and mozzarella cheese over the top.
6. Bake
Cover loosely with foil and bake for 20 minutes.
Remove the foil and bake for another 10–15 minutes, until the cheese is completely melted and lightly golden.
7. Rest and Serve
Let the casserole rest for 5–10 minutes.
Garnish with fresh parsley if desired.
Scoop into generous portions and serve warm.

- Dinner rolls
Tips for the Best Casserole
Don’t overcook the noodles: They continue cooking in the oven.
Drain the beef well: Too much grease can make the casserole oily.
Let it rest: A few minutes of resting makes it easier to serve neatly.
Use freshly shredded cheese: It generally melts more smoothly than pre-shredded cheese.
Want a deeper flavor? Add a tablespoon of Worcestershire sauce to the beef while browning.
Creamy, cheesy, hearty, and easy on the budget, Poor Man’s Husband Casserole is the kind of old-fashioned comfort food that turns simple pantry ingredients into a satisfying family dinner.
