These Bacon-Wrapped Chicken & Cheese Bites are juicy, cheesy, smoky, and incredibly easy to make. Tender chicken and melty cheese are wrapped in crispy bacon, then baked until golden and caramelized. They’re perfect for parties, game nights, appetizers, or an easy family snack.
Ingredients
- 1½ lbs (680 g) boneless, skinless chicken breasts or thighs
- 8 slices bacon
- 4 oz (115 g) cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ¼ teaspoon salt
- 1 tablespoon chopped fresh parsley
Optional Sweet Glaze
- 2 tablespoons brown sugar
- 1 tablespoon honey
- 1 tablespoon barbecue sauce
Directions
1. Prepare the Chicken
Preheat your oven to 400°F (200°C).
Cut the chicken into approximately 1½-inch bite-sized pieces.
Pat them dry with paper towels.
2. Season
Place the chicken pieces in a bowl.
Add garlic powder, smoked paprika, onion powder, black pepper, and salt.
Toss until evenly coated.
3. Prepare the Cheese Filling
Mix the softened cream cheese with the shredded cheddar and chopped parsley.
For easier handling, refrigerate the mixture for 10–15 minutes if it feels too soft.
4. Assemble the Bites
Cut each bacon slice into thirds.
Place a small amount of the cheese mixture onto each chicken piece.
Wrap each piece tightly with bacon.
Secure with a toothpick if necessary.
Place the bites seam-side down on a wire rack set over a foil-lined baking sheet.
5. Bake
Bake for approximately 25–30 minutes, turning once if needed.
The bacon should be browned and crisp, and the chicken should reach an internal temperature of 165°F (74°C).
6. Add the Glaze
If using the optional glaze, mix the brown sugar, honey, and barbecue sauce.
Brush it over the bacon-wrapped bites during the final 5–7 minutes of baking.
Watch carefully because the sugar can caramelize quickly.
7. Serve
Remove from the oven and let the bites rest for a few minutes.
Sprinkle with fresh parsley and serve warm.
Remember to remove toothpicks before eating.
Air Fryer Method
Preheat the air fryer to 375°F (190°C).
Arrange the chicken bites in a single layer, leaving space between them.
Air fry for approximately 15–20 minutes, turning halfway through, until the bacon is crisp and the chicken reaches 165°F (74°C).
