Carrot Walnut Cake

Ingredients
For the Cake
- 2 cups all-purpose flour
- 1½ teaspoons baking powder
- 1 teaspoon baking soda
- 1½ teaspoons ground cinnamon
- ¼ teaspoon salt
- 1 cup vegetable oil
- 1 cup granulated sugar
- ½ cup brown sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups finely grated carrots

- ½ cup raisins, optional
For the Cream Cheese Frosting
- 8 oz (225 g) cream cheese, softened
- ¼ cup unsalted butter, softened
- 1½ cups powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon fresh lemon juice
Directions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease and line a 9-inch round cake pan with parchment paper.
2. Mix the Dry Ingredients
In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
Set aside.
3. Mix the Wet Ingredients
In a large bowl, whisk the oil, granulated sugar, and brown sugar until well combined.
Add the eggs one at a time, whisking after each addition.
Stir in the vanilla.
