Zucchini Fritters in 5 Minutes
These quick and crispy zucchini fritters are an easy way to turn fresh zucchini into a delicious snack or side dish. They’re golden and crunchy on the outside, tender inside, and perfect with sour cream, Greek yogurt, or your favorite dipping sauce.
Ingredients
- 2 medium zucchini
- 1 large egg
- ½ cup all-purpose flour
- ½ cup shredded Parmesan cheese
- 1 garlic clove, minced
- 2 tablespoons chopped fresh parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning
- 2–3 tablespoons olive oil, for frying
Directions
1. Grate the Zucchini
Wash the zucchini and grate it using the large holes of a box grater.
Place the grated zucchini in a clean kitchen towel or several layers of paper towels.
Squeeze firmly to remove as much excess water as possible.
This step is essential for crispy fritters.
2. Make the Batter
Place the squeezed zucchini in a bowl.
Add the egg, flour, Parmesan, garlic, parsley, salt, pepper, and Italian seasoning.
Mix until everything is evenly combined.
The mixture should be moist but thick enough to hold its shape.
3. Heat the Pan
Heat the olive oil in a large skillet over medium-high heat.
The oil should be hot enough that a small drop of batter sizzles immediately.
4. Cook the Fritters
Scoop approximately 2 tablespoons of the mixture into the hot skillet for each fritter.
Flatten each mound gently with the back of a spoon.
Cook for approximately 2–3 minutes per side, or until golden brown and crisp.
Avoid overcrowding the pan. Cook in batches if necessary.
5. Drain and Serve
Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil.
Serve immediately while they’re hot and crispy.
Quick Dipping Sauce
Mix together:
- ½ cup sour cream or Greek yogurt
- 1 tablespoon lemon juice
- 1 small minced garlic clove
- 1 tablespoon chopped parsley
- Pinch of salt and black pepper
Stir well and serve alongside the fritters.
Tips for Crispy Zucchini Fritters
Squeeze the zucchini well: Excess moisture is the biggest reason fritters turn soggy.
Don’t make them too thick: Thin fritters cook faster and develop crispier edges.
Use medium-high heat: Too low and the fritters absorb oil; too high and the outside can burn before the center cooks.
Don’t overcrowd the pan: Give each fritter room to brown properly.
Serve immediately: They’re at their crispiest right out of the skillet.
