- 1½ lbs (680 g) baby potatoes, halved
- 1 red bell pepper, cut into chunks
- 1 zucchini, sliced into half-moons
- 1 small red onion, cut into wedges
- 1 cup broccoli florets
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon dried thyme
- ½ teaspoon paprika
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Optional
- ½ teaspoon red pepper flakes
- 1 tablespoon fresh lemon juice
- Extra Parmesan for serving
Directions
1. Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a large baking sheet with parchment paper or lightly grease it.
For extra crispiness, place the empty baking sheet in the oven while it preheats.
2. Prepare the Potatoes
Wash the baby potatoes thoroughly and pat them dry.
Cut larger potatoes in half. Very small potatoes can be left whole.
Place them in a large bowl.
3. Make the Garlic Herb Seasoning
In a small bowl, combine:
- Olive oil
- Minced garlic
- Italian seasoning
- Thyme
- Paprika
- Salt
- Black pepper

5. Roast the Potatoes First

7. Continue Roasting
Return the pan to the oven.
Roast for another 15–20 minutes, or until:

- The edges are lightly caramelized
For darker, crispier edges, roast for another 3–5 minutes.
8. Add the Parmesan
Remove the tray from the oven.
Immediately sprinkle the Parmesan cheese over the hot potatoes and vegetables.
Return the pan to the oven for 2–3 minutes, just until the Parmesan melts and becomes lightly golden.
9. Finish and Serve
Remove from the oven.
Sprinkle generously with fresh parsley.
Add a squeeze of fresh lemon juice if desired.
Serve immediately with extra Parmesan on top.
