Ingredients
For the Cornmeal Mush
- 1 cup yellow cornmeal
- 4 cups water, divided
- 1 teaspoon salt
- 1 teaspoon sugar, optional
- 2 tablespoons butter
For Frying
- 2–3 tablespoons butter or vegetable oil

Directions
1. Prepare the Cornmeal Mixture
Place 1 cup of cornmeal in a bowl.
Add 1 cup cold water and whisk until smooth. Starting the cornmeal in cold water helps prevent lumps.
2. Boil the Water
Pour the remaining 3 cups of water into a heavy saucepan.
Add the salt and optional sugar.
Bring to a boil.
3. Cook the Mush
Slowly pour the cornmeal mixture into the boiling water while whisking constantly.
Reduce the heat to low once the mixture thickens.
Continue cooking for approximately 10–15 minutes, stirring frequently, until the mixture becomes very thick and smooth.
Stir in the butter.
4. Chill Until Firm
Lightly grease a loaf pan.
Pour the hot cornmeal mush into the pan and smooth the top.

5. Slice
Once completely firm, remove the mush from the pan.
Cut it into slices approximately ½ inch thick.
If desired, lightly dust each slice with cornmeal for an extra-crispy exterior.
6. Fry
Heat butter or oil in a heavy skillet over medium heat.
Carefully place the slices into the skillet.
