Ingredients
For the Filling
- 1 lb (450 g) thinly sliced ribeye steak
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 8 oz mushrooms, thinly sliced, optional
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- ½ teaspoon salt
- ½ teaspoon black pepper
- 6 slices provolone cheese
- 1 tablespoon chopped fresh parsley, optional
For the Rolls
- 1 sheet refrigerated crescent roll dough or puff pastry
- 1 egg
- 1 tablespoon water
- 1 tablespoon grated Parmesan, optional
Directions
1. Prepare the Steak
If the steak isn’t already thinly sliced, place it in the freezer for about 20–30 minutes. This firms it up and makes it easier to slice very thinly.
Slice the beef against the grain into thin strips.
2. Cook the Vegetables
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the onion, bell pepper, and mushrooms if using.
Cook for approximately 5–7 minutes, stirring occasionally, until the vegetables are softened and lightly browned.
Add the minced garlic and cook for another 30 seconds.
Transfer the vegetables to a plate.
3. Cook the Beef
Increase the heat to medium-high.
Add the sliced steak to the same skillet.
Cook for approximately 3–5 minutes, stirring frequently, until the beef is browned and cooked through.
Add Worcestershire sauce, salt, and black pepper.
Return the cooked vegetables to the skillet and toss everything together.
Remove from the heat and allow the filling to cool for several minutes.
4. Add the Cheese
Lay the provolone slices over the warm beef mixture.
Cover the skillet for about 1 minute, allowing the cheese to melt.
Stir gently so the cheese becomes incorporated throughout the filling.
Let the mixture cool slightly before assembling the rolls.
5. Prepare the Dough
Preheat the oven to 375°F (190°C).
Line a baking sheet with parchment paper.
Unroll the crescent dough or puff pastry onto a lightly floured surface.
If using puff pastry, gently roll it out into a rectangle.
Cut the dough into approximately 6–8 rectangles, depending on the size you want.
6. Fill the Rolls
Place a portion of the cheesesteak mixture in the center of each piece of dough.
Don’t overfill them.
Fold the dough over the filling and pinch the edges firmly to seal.
Place each roll seam-side down on the prepared baking sheet.
7. Add the Egg Wash
Whisk the egg with 1 tablespoon of water.
Brush the tops of the rolls with the egg wash.
For extra flavor, sprinkle a little Parmesan over the top.
8. Bake
Bake for approximately 18–25 minutes, depending on the dough you’re using.
The rolls are ready when the pastry is puffed and deeply golden brown.
9. Rest and Serve
Allow the rolls to cool for about 5 minutes before serving.
