Fondant Citron Mascarpone
This Fondant Citron Mascarpone is a wonderfully soft and creamy French-inspired lemon cake with a delicate, almost melt-in-your-mouth texture. Mascarpone gives the cake a rich, velvety crumb, while fresh lemon adds a bright citrus flavor that keeps the dessert from feeling too heavy.
Ingredients
For the Lemon Mascarpone Cake
- 8 oz (225 g) mascarpone cheese, softened
- ¾ cup granulated sugar
- 3 large eggs, room temperature
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, melted and slightly cooled
- 2 large lemons
- 1 teaspoon vanilla extract
For the Lemon Glaze
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon finely grated lemon zest
- 1–2 teaspoons milk, if needed
Optional Decoration
- Thin lemon slices
- Fresh berries
- Powdered sugar
- Extra lemon zest
- Whipped cream
Directions
1. Prepare the Oven and Pan
Preheat the oven to 350°F (175°C).
Grease a 9-inch round cake pan and line the bottom with parchment paper.
You can also use an 8-inch square pan for thicker, more compact pieces.
2. Prepare the Lemons
Wash and dry the lemons thoroughly.
Finely grate the zest from both lemons, being careful to avoid the bitter white pith.
Juice the lemons and set aside 2 tablespoons of juice for the cake and another 2 tablespoons for the glaze.
3. Combine the Mascarpone and Sugar
Place the mascarpone and granulated sugar in a large mixing bowl.
Beat on medium speed for approximately 1–2 minutes, just until smooth and creamy.
Don’t overbeat mascarpone.
4. Add the Eggs
Add the eggs one at a time, mixing briefly after each addition.
Add the vanilla extract and lemon zest.
Mix until everything is smooth and well combined.
5. Add the Butter and Lemon Juice
Slowly pour in the melted butter while mixing on low speed.
Add the lemon juice and mix just until incorporated.
6. Add the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the mascarpone mixture.
Fold or mix gently until no dry flour remains.
Don’t overmix the batter. Overmixing can make the finished cake heavier and less tender.
7. Bake
Pour the batter into the prepared pan and smooth the surface.
Bake for approximately 30–40 minutes, depending on the size and material of your pan.
The edges should be lightly golden and the center should look set but remain soft.
A toothpick inserted into the center should come out with a few moist crumbs rather than completely dry.
8. Cool
Allow the cake to cool in the pan for approximately 15 minutes.
Run a thin knife around the edge and carefully remove the cake.
Transfer it to a wire rack and allow it to cool completely before glazing.
9. Make the Lemon Glaze
Place the powdered sugar in a small bowl.
Add the lemon juice and lemon zest.
Whisk until smooth.
If the glaze is too thick, add milk ½ teaspoon at a time until it reaches a thick but pourable consistency.
10. Glaze the Cake
Pour the lemon glaze over the completely cooled cake.
Use a spatula or the back of a spoon to gently spread it toward the edges.
Allow the glaze to set for approximately 15–20 minutes.
11. Decorate and Serve
Finish with a little extra lemon zest, powdered sugar, or thin lemon slices.
For an elegant presentation, serve each slice with fresh berries and a small spoonful of whipped cream.
Tips for the Best Fondant Citron Mascarpone
Use room-temperature mascarpone: It blends much more smoothly with the other ingredients.
Use fresh lemons: Fresh zest and juice provide a much brighter citrus flavor than bottled lemon juice.
Don’t overmix: Once the flour is incorporated, stop mixing.
Don’t overbake: The defining characteristic of this cake is its soft, moist center.
Cool before glazing: A warm cake can cause the glaze to melt and disappear into the surface.
Variations
Lemon Blueberry
Fold 1 cup fresh blueberries into the batter before baking.
Raspberry Lemon
Add fresh raspberries to the batter and decorate the finished cake with additional berries.
Orange Mascarpone
Replace the lemon zest and juice with fresh orange zest and juice.
Lemon Poppy Seed
Add 1½ tablespoons poppy seeds to the batter.
White Chocolate Lemon
Fold in ½ cup finely chopped white chocolate for an extra-rich variation.
Storage
Store the cake covered in the refrigerator because of the mascarpone.
It will keep for approximately 3–4 days.
Allow slices to sit at room temperature for about 10–15 minutes before serving for the best texture and flavor.
This Fondant Citron Mascarpone is soft, creamy, intensely lemony, and wonderfully delicate—the kind of simple French-inspired dessert that tastes elegant without requiring complicated techniques.
