Ingredients
- 2½–3 lb (1.1–1.4 kg) boneless pork loin
- 1 can (12 oz) Coca-Cola
- ½ cup brown sugar, packed

- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1 small onion, thinly sliced

- 1 tablespoon cornstarch
- 2 tablespoons cold water
Directions
1. Prepare the Pork
Pat the pork loin dry with paper towels.
Season all sides with salt, black pepper, and smoked paprika.
Heat the olive oil in a large skillet over medium-high heat. Once hot, sear the pork loin for approximately 2–3 minutes per side, until nicely browned.
The pork doesn’t need to be cooked through at this stage—the searing simply adds extra flavor and color.
2. Make the Coca-Cola Sauce
In a bowl, whisk together the Coca-Cola, brown sugar, ketchup, soy sauce, Worcestershire sauce, Dijon mustard, and minced garlic.
Whisk until the brown sugar is mostly dissolved.
3. Arrange in the Slow Cooker
Place the sliced onion in the bottom of a 6-quart slow cooker.
Set the seared pork loin on top.

5. Rest the Pork

Loosely cover it with foil and let it rest for 5–10 minutes before slicing.
6. Thicken the Glaze
Pour the cooking liquid into a saucepan, or use a portion of the liquid from the slow cooker.
In a small bowl, whisk together the cornstarch and cold water until smooth.
Bring the cooking liquid to a gentle simmer and slowly whisk in the cornstarch mixture.
Cook for approximately 1–2 minutes, stirring continuously, until the sauce becomes glossy and thick enough to coat a spoon.
7. Slice and Serve
Slice the pork loin into thin or medium-thick pieces.
Arrange the slices on a serving platter and spoon the warm Coca-Cola glaze generously over the top.
Garnish with a little chopped parsley if desired.
