Texas Christmas Dip is a creamy, cheesy, and festive appetizer that’s perfect for holiday gatherings, game days, potlucks, and parties. It’s packed with savory sausage, creamy cheese, tomatoes, and green chiles, creating a warm dip that’s rich, slightly spicy, and incredibly scoopable.
Ingredients
- 1 lb (450 g) ground breakfast sausage or spicy sausage
- 8 oz (225 g) cream cheese, softened and cut into cubes
- 8 oz (225 g) Velveeta or other melting cheese, cubed
- 1 can (10 oz) diced tomatoes with green chiles, undrained
- ½ cup shredded cheddar cheese
- ¼ cup diced green onions
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
- 1–2 tablespoons milk, if needed
- Fresh cilantro, optional, for garnish
Directions
1. Brown the Sausage
Heat a large skillet over medium heat.
Add the sausage and cook for 6–8 minutes, breaking it into small pieces as it browns.
Continue cooking until the sausage is completely cooked through.
If there is a large amount of grease, carefully drain the excess.
2. Add the Cream Cheese
Reduce the heat to low.
Add the softened cream cheese and stir it into the hot sausage until it begins to melt and become creamy.
3. Add the Melting Cheese
Add the cubed Velveeta or other melting cheese.
Stir continuously over low heat until the cheese is completely melted and the mixture becomes smooth.
Avoid high heat, which can cause the cheese mixture to become oily or grainy.
4. Add the Tomatoes and Seasonings
Stir in the undrained diced tomatoes with green chiles.
Add the shredded cheddar, garlic powder, smoked paprika, and black pepper.
Continue stirring until everything is thoroughly combined and heated through.
5. Adjust the Consistency
If the dip is thicker than you prefer, stir in 1 tablespoon of milk at a time until you reach your desired consistency.
The finished dip should be creamy and thick enough to coat a tortilla chip without being difficult to scoop.
6. Garnish
Remove from the heat and stir in the sliced green onions.
Top with additional cheddar, green onions, or fresh cilantro if desired.
Slow Cooker Method

- Brown the sausage in a skillet and drain excess grease.
- Transfer the sausage to a 3–4-quart slow cooker.
- Add the cream cheese, melting cheese, tomatoes with green chiles, cheddar, and seasonings.
- Cover and cook on LOW for 1½–2 hours, stirring occasionally.
- Once completely melted and smooth, switch the slow cooker to WARM for serving.
Stir occasionally while serving to maintain an even consistency.
