Ingredients
- 3 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- ¾ cup whole milk
- ½ cup unsalted butter
- 1 teaspoon vanilla extract

Directions
1. Prepare the Pan
Line an 8×8-inch square baking pan with parchment paper, leaving some paper hanging over the sides.
Lightly butter the parchment and set the pan aside.
2. Combine the Dry Ingredients
In a heavy-bottomed saucepan, whisk together the sugar, cocoa powder, and salt.
Whisking first helps break up cocoa lumps and ensures the ingredients are evenly distributed.
3. Add the Milk
Pour in the whole milk and stir until the mixture is smooth.
Add the butter and place the saucepan over medium heat.
4. Bring the Mixture to a Boil
Stir continuously while the butter melts and the sugar mixture heats.
Once the mixture reaches a full rolling boil, stop stirring.
Continue boiling until the mixture reaches 234–238°F (112–114°C) on a candy thermometer. This is the soft-ball stage needed for traditional fudge.
If you don’t have a candy thermometer, drop a small amount of the mixture into a cup of very cold water. It should form a soft, pliable ball when gathered between your fingers.
5. Remove From the Heat
Immediately remove the saucepan from the heat.
Add the vanilla extract, but don’t stir vigorously yet.
Allow the mixture to cool undisturbed until it reaches approximately 110°F (43°C).
6. Beat the Fudge
Once cooled, beat the mixture vigorously with a wooden spoon or sturdy spatula for approximately 5–10 minutes.
The fudge will gradually become thicker, lose some of its shine, and develop a creamy consistency.
If you’re adding nuts, fold them in toward the end of the beating process.
7. Pour Into the Pan
Quickly transfer the thickened fudge into the prepared pan.
Spread it evenly with a spatula.
Work fairly quickly because the fudge will continue to set as it cools.
8. Let It Set
Allow the fudge to cool at room temperature for 2–3 hours, or until completely firm.
For easier cutting, you can refrigerate it after it has cooled.
9. Cut and Serve
Lift the fudge from the pan using the parchment paper.
Place it on a cutting board and cut into small squares with a sharp knife.
For cleaner cuts, wipe the knife between slices.
