These easy blender oatmeal pancakes are made with just a handful of simple ingredients, including wholesome oats, eggs, and creamy cottage cheese. Everything goes straight into the blender, making the batter smooth with almost no cleanup. The pancakes cook up soft and fluffy with lightly crisp edges and are perfect for breakfast.
Ingredients
- 1 cup rolled oats
- ½ cup cottage cheese
- 2 large eggs
- ½ ripe banana
- ½ teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- Pinch of salt
- 1–2 tablespoons milk, only if needed
- Butter or cooking spray, for the pan
Optional Toppings
- Fresh strawberries or blueberries
- Sliced banana
- Greek yogurt
- Peanut or almond butter
- Honey or maple syrup
- Chopped nuts
- Powdered sugar
Directions
1. Add Everything to the Blender
Add the rolled oats, cottage cheese, eggs, banana, vanilla, baking powder, cinnamon, and salt to a high-speed blender.
Blend for approximately 30–60 seconds, or until the mixture becomes smooth and the oats are completely broken down.
If the batter looks extremely thick, add 1 tablespoon of milk and blend again. Add another tablespoon only if necessary.
2. Let the Batter Rest
Allow the batter to sit for approximately 5 minutes.
The oats will absorb some of the liquid, and the batter will thicken slightly. If it becomes too thick to pour easily, stir in a small splash of milk.
3. Heat the Pan
Place a nonstick skillet or griddle over medium-low to medium heat.
Lightly grease the surface with butter or cooking spray.
Avoid using excessively high heat because the banana can cause the pancakes to brown quickly before the centers are fully cooked.
4. Cook the Pancakes
Pour approximately ¼ cup of batter onto the hot skillet for each pancake.
Cook for about 2–3 minutes, or until bubbles appear across the surface and the edges begin to look set.
5. Flip
Carefully slide a spatula underneath the pancake and flip it.
Cook the second side for another 1–2 minutes, until golden brown and cooked through.
Repeat with the remaining batter, lightly greasing the pan between batches if necessary.
6. Serve
Stack the warm pancakes on a plate and add your favorite toppings.
Fresh berries with Greek yogurt and a drizzle of maple syrup make a delicious combination.
Tips for Perfect Blender Pancakes
Use rolled oats: They blend into a smooth batter and provide a pleasant texture.
Don’t overfill the blender: If you’re doubling the recipe, blend in batches if your blender isn’t large enough.
Give the batter time to rest: A few minutes allows the oats to absorb moisture and produces a thicker, easier-to-cook batter.
Keep the heat moderate: Medium-low heat gives the pancakes enough time to cook through without burning the outside.
Make them evenly sized: Using approximately ¼ cup of batter for each pancake helps them cook at the same rate.
Easy Variations
Blueberry Oatmeal Pancakes
Fold fresh or frozen blueberries into the batter after blending.
Chocolate Chip Pancakes
Stir in a handful of mini chocolate chips before cooking.
Apple Cinnamon
Add ½ teaspoon extra cinnamon and fold finely diced apple into the batter.
Peanut Butter Pancakes
Add 1 tablespoon of creamy peanut butter to the blender for a nutty flavor.
Higher-Protein Pancakes
Use a cottage cheese with a higher protein content and serve the pancakes with Greek yogurt.
Storage
Allow leftover pancakes to cool completely before storing them in an airtight container.
Refrigerate for up to 3–4 days or freeze for up to 2 months.
To reheat, warm them in a toaster, skillet, or microwave until heated through.
These blender oatmeal pancakes are an easy, satisfying breakfast with a soft texture, lightly sweet flavor, and plenty of delicious topping possibilities.
