Old-School German Chocolate Cake
Old-School German Chocolate Cake is a classic American dessert featuring tender, lightly chocolatey cake layers covered with a rich coconut-pecan frosting. The combination of buttery caramel-like filling, toasted pecans, and sweet coconut makes this cake incredibly nostalgic and satisfying.
Ingredients
For the Chocolate Cake
- 2 cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1½ teaspoons baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1½ cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 1 cup hot water
- 2 ounces semi-sweet chocolate, melted
For the Coconut-Pecan Frosting
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 large egg yolks
- ½ cup unsalted butter
- 1 teaspoon vanilla extract
- 1½ cups sweetened shredded coconut
- 1 cup chopped pecans
- Pinch of salt
Directions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease three 8-inch round cake pans and line the bottoms with parchment paper.
2. Mix the Dry Ingredients
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Set aside.
3. Cream the Butter and Sugar
In a large bowl, beat the softened butter and sugar for about 3–4 minutes, until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla.
4. Add the Chocolate
Stir the melted chocolate into the butter mixture until evenly combined.
5. Finish the Batter
Add the dry ingredients in three additions, alternating with the buttermilk.
Mix gently after each addition.
Slowly stir in the hot water.
The batter will be fairly thin, which is normal.
6. Bake
Divide the batter evenly between the prepared pans.
Bake for approximately 25–30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Don’t overbake.
Allow the cakes to cool in their pans for 10 minutes, then turn them onto wire racks to cool completely.
Make the Coconut-Pecan Frosting
1. Combine the Ingredients
In a saucepan, whisk together the evaporated milk, sugar, egg yolks, and butter.
Cook over medium-low heat, stirring constantly.
2. Thicken the Frosting
Continue cooking for approximately 8–12 minutes, until the mixture thickens enough to coat the back of a spoon.
Do not let it boil aggressively.
Remove from the heat.
Stir in the vanilla, coconut, pecans, and a pinch of salt.
Allow the frosting to cool until it reaches a spreadable consistency.
Assemble the Cake
Place the first cake layer on a serving plate.
Spread a generous layer of coconut-pecan frosting over the top.
Add the second cake layer and repeat.
Place the final cake layer on top.
Spread the remaining frosting over the top of the cake and, if desired, lightly around the sides.
For the traditional look, leave some of the chocolate cake layers visible.
Tips for the Best German Chocolate Cake
Don’t overbake the cake: The layers should remain soft and moist.
Cool the frosting before assembling: Warm frosting can slide between the layers.
Toast the pecans: Toasting them for a few minutes in a dry skillet brings out their natural flavor.
Use room-temperature ingredients: They combine more smoothly and produce a better cake texture.
Give the frosting time to thicken: It becomes easier to spread as it cools.
Optional Chocolate Drizzle
For an extra-decadent finish, melt:
- ½ cup chocolate chips
- 2 tablespoons heavy cream
Stir until smooth and drizzle over the finished cake.
This isn’t traditional, but it adds a beautiful chocolate finish.
Storage
Store the finished cake covered in the refrigerator for up to 4–5 days.
Let it sit at room temperature for about 20–30 minutes before serving for the best flavor and texture.
You can also freeze individual cake slices tightly wrapped for up to 2 months.
