Creamy Mango Mosaic Gelatin
Creamy Mango Mosaic Gelatin is a beautiful chilled dessert made with bright mango jelly cubes suspended in a silky, creamy gelatin base. When sliced, the colorful mango cubes create a mosaic-like pattern. This style of dessert is especially popular in Filipino-inspired gelatin desserts.
Ingredients
For the Mango Jelly Cubes
- 2 large ripe mangoes, peeled and diced
- 1½ cups water
- 1 packet (about 25 g) mango-flavored or unflavored gelatin
- ¼ cup granulated sugar
- ½ cup mango puree
For the Creamy Base
- 1 packet (about 25 g) unflavored gelatin
- 1½ cups hot water
- 1 can (14 oz / 397 g) sweetened condensed milk
- 1 cup evaporated milk
- 1 cup heavy cream or all-purpose cream
- ½ cup mango puree
- 1 tsp vanilla extract
- 2 tbsp sugar, optional
For Garnishing
- Fresh mango cubes
- Whipped cream, optional
- Mint leaves, optional
👩🍳 Step-by-Step Instructions
1. Prepare the Mango Puree
Peel the mangoes and remove the seeds.
Cut the flesh into pieces and place them in a blender.
Blend until completely smooth. You should have roughly 1½ cups of mango puree.
Set the puree aside.
Tip: Choose ripe, sweet mangoes for the strongest natural mango flavor.
2. Make the Mango Jelly
Pour ½ cup mango puree into a saucepan.
Add:
- 1½ cups water
- Mango gelatin
- Sugar
Whisk everything together while the mixture is still cold.
Place the saucepan over medium heat.
Stir continuously until the gelatin is completely dissolved and the mixture is hot. Avoid letting it boil aggressively.
Pour the mixture into a shallow square or rectangular container.
Let it cool slightly, then refrigerate for approximately 2–3 hours, or until completely firm.
3. Cut the Mango Jelly Into Cubes
Once the mango jelly is completely set, remove it from the refrigerator.
Cut it into approximately ¾-inch cubes.
Gently loosen the cubes with a spatula.
Set them aside while preparing the creamy layer.
4. Prepare the Creamy Gelatin Mixture
Place the unflavored gelatin in a large bowl.
Slowly pour in 1½ cups hot water, whisking continuously until the gelatin has completely dissolved.
Add:
- Condensed milk
- Evaporated milk
- Heavy cream
- ½ cup mango puree
- Vanilla extract
Whisk until completely smooth.
Taste the mixture.
If you prefer a sweeter dessert, add 1–2 tablespoons sugar.
This creamy gelatin method is similar to established mango gelatin recipes that combine gelatin with condensed and evaporated milk for a smooth, creamy texture.
5. Cool the Cream Mixture
This step is very important.
Allow the creamy gelatin mixture to cool until it is lukewarm or just slightly warm.
Do not pour it over the mango cubes while it is very hot, because the heat can melt the cubes and ruin the mosaic effect.
6. Assemble the Mosaic
Lightly grease an 8-inch square dish, loaf pan, or gelatin mold.
Arrange about half of the mango jelly cubes across the bottom.
Slowly pour some of the creamy mixture over the cubes.
Add the remaining mango cubes.
Pour the remaining cream mixture over everything.
Use a spoon or spatula to gently move a few cubes around so they are distributed throughout the dessert.
Don’t stir aggressively.
7. Refrigerate
Cover the dish with plastic wrap.
Refrigerate for at least 4 hours, preferably overnight.
The dessert should become completely firm before cutting. Similar two-layer mango gelatin recipes recommend several hours of refrigeration for a clean, firm set.
8. Unmold and Serve
If using a mold, carefully run a thin knife around the edges.
Dip the bottom of the mold briefly in warm water for a few seconds, being careful not to let water touch the dessert.
Place a serving plate over the mold and carefully turn it upside down.
For a square dish, simply cut the gelatin into neat squares.
Garnish with fresh mango cubes, whipped cream, or a few mint leaves.
🥭 Tips for Perfect Mosaic Gelatin
- Don’t use hot cream mixture: Let it cool before adding it to the mango cubes.
- Use firm jelly cubes: Refrigerate the mango gelatin until completely set before cutting.
- Don’t overmix: Rough stirring can break the cubes.
- Use sweet, ripe mangoes: They make a huge difference in flavor.
- Chill overnight: This gives the dessert the best texture and makes slicing easier.
- For a more luxurious version, use heavy cream instead of evaporated milk or all-purpose cream.
- You can also make the mango cubes using yellow mango gelatin and the outer layer with plain unflavored gelatin for a stronger mosaic contrast.
