Oven-Roasted Smoked Sausage and Potatoes
This easy one-pan smoked sausage and potato dinner is hearty, crispy, flavorful, and perfect for a busy weeknight. The potatoes roast until golden and tender while the sausage becomes beautifully browned and caramelized.
Ingredients
- 1 lb (450 g) smoked sausage, sliced into rounds
- 5 medium-large potatoes, peeled and cut into ½-inch cubes
- 1 large onion, chopped
- 1 bell pepper, chopped — optional
- 3 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp regular paprika
- 1 tsp dried thyme
- ½ tsp garlic powder
- ½ tsp dried oregano
- Salt, to taste
- ½ tsp freshly ground black pepper
- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese
- Fresh parsley, for garnish
Instructions
1. Prepare the oven
Preheat your oven to 400°F (200°C).
Line a large rimmed baking sheet with aluminum foil or parchment paper and lightly grease it.
2. Prepare the potatoes
Wash, peel, and cut the potatoes into small, evenly sized cubes. Keeping the pieces around ½ inch helps them cook evenly and become crispy.
Place the potatoes in a large bowl.
Add the sliced smoked sausage, chopped onion, and bell pepper if using.
3. Season everything
Add:
- Olive oil
- Smoked paprika
- Paprika
- Thyme
- Garlic powder
- Oregano
- Salt
- Black pepper
Toss everything thoroughly until the potatoes and sausage are evenly coated.
4. Arrange on the baking sheet
Spread everything over the baking sheet in one single layer.
Try not to overcrowd the pan. Giving the ingredients some space helps the potatoes roast instead of becoming steamed.
5. Roast
Place the tray in the oven and roast for about 20 minutes.
Remove the tray and carefully stir everything.
Add the minced garlic and toss again.
Return the tray to the oven and roast for another 15–25 minutes, until the potatoes are fork-tender and golden brown and the sausage is nicely caramelized. Similar versions roast for 45–60 minutes, stirring periodically.
6. Add the cheese
Sprinkle the shredded cheddar evenly over the sausage and potatoes.
Return the tray to the oven for 2–4 minutes, just until the cheese melts.
For a slightly browned cheese topping, switch to the broiler for about 1 minute, watching carefully.
7. Garnish and serve
Remove from the oven and sprinkle with fresh chopped parsley.
Serve immediately while the potatoes are hot and crispy.
