Cracker Barrel Meatloaf
This Cracker Barrel-style Meatloaf is a classic comfort-food favorite with a tender, flavorful center and a sweet, tangy glaze baked right on top. Made with ground beef, onion, bell pepper, oats, and a simple tomato-based topping, it’s hearty, satisfying, and perfect for a family dinner.
Ingredients
For the Meatloaf
- 2 pounds ground beef
- 1 small onion, finely chopped
- 1/2 green bell pepper, finely chopped
- 2 large eggs
- 1 cup quick-cooking oats
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
For the Glaze
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line a baking sheet with parchment paper.
2. Make the Meatloaf Mixture
In a large bowl, combine the ground beef, chopped onion, bell pepper, eggs, oats, milk, salt, black pepper, parsley, garlic powder, and onion powder.
Mix gently with your hands or a wooden spoon until everything is just combined. Avoid overmixing, as this can make the meatloaf tough.
3. Shape the Meatloaf
Transfer the mixture to the prepared baking dish and shape it into a loaf approximately 9×5 inches.
4. Prepare the Glaze
In a small bowl, whisk together the ketchup, brown sugar, yellow mustard, and Worcestershire sauce until smooth.
Spread about half of the glaze evenly over the top of the meatloaf.
5. Bake
Bake uncovered for 50–60 minutes.
Remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and bake for another 10–15 minutes, or until the center reaches at least 160°F (71°C).
6. Rest and Serve
Allow the meatloaf to rest for 10–15 minutes before slicing. This helps the juices redistribute and makes it easier to cut clean slices.
Serve warm with mashed potatoes, green beans, macaroni and cheese, or your favorite vegetables.
Tips for the Best Meatloaf
- Finely chop the vegetables so they soften completely while baking.
- Don’t overmix the beef mixture.
- Let the meatloaf rest before slicing.
- For extra moisture, you can sauté the onion and bell pepper in a little butter before adding them to the mixture.
- Make sure the center reaches 160°F (71°C) for food safety.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Individual slices can be reheated in the microwave or oven.
The baked meatloaf can also be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.
