These Caramel Marshmallow Rice Krispie Balls are a fun, no-bake treat made with crispy rice cereal, gooey marshmallows, buttery caramel, and a touch of vanilla. Ingredients
- 6 cups Rice Krispies cereal
- 4 cups mini marshmallows
- 1/2 cup unsalted butter
- 1 package (11 ounces) individually wrapped caramels, unwrapped
- 2 tablespoons heavy cream or milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup finely chopped pecans or walnuts, optional
Instructions
1. Prepare the Cereal
Place the Rice Krispies cereal in a very large mixing bowl and set aside.
Lightly grease your hands or a sheet of parchment paper to make shaping the balls easier later.
2. Make the Marshmallow Mixture
In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir continuously until completely melted and smooth.
Remove from the heat and stir in the vanilla and salt.
3. Combine with the Cereal
Immediately pour the melted marshmallow mixture over the Rice Krispies. Gently stir with a buttered spatula until the cereal is evenly coated.
Let the mixture cool for a few minutes, just until it is comfortable enough to handle.
4. Make the Caramel
In another saucepan, combine the unwrapped caramels and heavy cream. Heat over low heat, stirring frequently, until the caramels are completely melted and smooth.
Remove from the heat and let the caramel cool slightly so it remains pourable but isn’t extremely hot.
5. Form the Balls
Take a small handful of the cereal mixture and gently press it together. Flatten it slightly in your palm, add about 1 teaspoon of caramel to the center, then carefully wrap the cereal mixture around the caramel.
Roll gently between your palms to form a ball.
Repeat with the remaining mixture.
6. Add Optional Toppings
If desired, immediately roll the balls in finely chopped pecans or walnuts. You can also drizzle the finished balls with a little extra melted caramel.
Place them on parchment paper and allow them to set completely.
Tips for the Best Rice Krispie Balls
- Work while the cereal mixture is still slightly warm; it becomes harder to shape once completely cooled.
- Grease your hands lightly with butter to prevent sticking.
- Don’t use too much caramel in the center, or the balls may become difficult to seal.
- Keep the heat low when melting the caramel to prevent scorching.
- For a festive finish, drizzle with melted chocolate after the balls have set.
Storage
Store the finished Rice Krispie balls in an airtight container at room temperature for up to 3 days. Separate layers with parchment paper to prevent them from sticking together.
