Ingredients
For the Graham Cracker Layer
- 1½ cups graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
For the Cheesecake Filling
- 8 oz (225 g) cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup heavy whipping cream
- ½ cup sour cream
For the Strawberry Layer
- 2 cups fresh strawberries, diced
- 2 tablespoons granulated sugar
- 1 teaspoon fresh lemon juice
Instructions
- Prepare the strawberries: Add the diced strawberries, sugar, and lemon juice to a bowl. Stir gently and let them sit for about 10–15 minutes so the berries become juicy and flavorful.
- Make the crust: Combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
- Make the cheesecake filling: Beat the softened cream cheese and powdered sugar until smooth. Add the vanilla and sour cream and mix until combined.
- Whip the cream: In a separate bowl, beat the heavy cream until soft peaks form. Gently fold it into the cream cheese mixture until smooth and fluffy.
- Start layering: Spoon a layer of graham cracker mixture into the bottom of each small jar. Gently press it down.
- Add cheesecake filling: Pipe or spoon a layer of cheesecake filling over the crumbs.
- Add strawberries: Spoon a layer of juicy strawberries over the cheesecake mixture.
- Repeat: Add another layer of graham crumbs, cheesecake filling, and strawberries until the jars are filled.
- Chill: Cover the jars and refrigerate for at least 2 hours before serving.
- Garnish: Top with a fresh strawberry, a small dollop of whipped cream, or a sprinkle of graham cracker crumbs before serving.

- Use ripe, sweet strawberries for the best flavor.
