Sloppy Joe Quesadillas
Take everything you love about classic Sloppy Joes and tuck it inside a crispy, cheesy quesadilla! These Sloppy Joe Quesadillas are packed with savory ground beef, tangy tomato sauce, melted cheese, and golden tortillas. They’re quick, family-friendly, and perfect for an easy weeknight meal.
Ingredients
- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- ¾ cup tomato sauce
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon yellow mustard
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 flour tortillas
- 2 cups shredded cheddar or Monterey Jack cheese
- 1 tablespoon butter or oil, for cooking
Instructions
- Cook the beef: Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.
- Add the aromatics: Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for another 30 seconds.
- Make the Sloppy Joe filling: Stir in the tomato sauce, ketchup, Worcestershire sauce, brown sugar, mustard, smoked paprika, salt, and pepper. Simmer for 5–8 minutes, stirring occasionally, until thick and flavorful.
- Assemble the quesadillas: Place a tortilla on a clean surface. Sprinkle half with shredded cheese, spoon some Sloppy Joe mixture over the cheese, then add another layer of cheese. Fold the tortilla in half.
- Cook: Heat a little butter or oil in a skillet over medium heat. Place the quesadilla in the pan and cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and the cheese has melted.
- Slice and serve: Transfer to a cutting board, let cool for a minute, then cut into wedges. Repeat with the remaining tortillas and filling.
