Pecan Pie Muffins are the perfect combination of a tender, buttery muffin and the rich, caramel-like flavor of classic pecan pie. Packed with chopped pecans and brown sugar, these muffins have slightly crisp edges, a soft center, and plenty of nutty flavor. They’re wonderful for breakfast, brunch, or an easy homemade dessert.
Ingredients
- 1 cup chopped pecans
- 1 cup packed light brown sugar
- ½ cup all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 large eggs
- ½ cup unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin pan or line it with paper liners.
2. Combine the Dry Ingredients
In a large bowl, whisk together the brown sugar, flour, baking powder, and salt.
Stir in the chopped pecans.
3. Add the Wet Ingredients
In a separate bowl, whisk the eggs, melted butter, and vanilla extract until well combined.
Pour the wet mixture into the dry ingredients and gently stir just until everything is combined. Avoid overmixing.
4. Fill the Muffin Pan
Divide the batter evenly among the muffin cups, filling each about ¾ full.
For an extra nutty topping, sprinkle a few additional chopped pecans over each muffin.
5. Bake
Bake for 18–22 minutes, or until the tops are golden brown and a toothpick inserted near the center comes out with a few moist crumbs.
Be careful not to overbake, as the muffins should remain soft and slightly chewy in the center.
6. Cool and Serve
Let the muffins cool in the pan for about 5–10 minutes, then transfer them to a wire rack.
Serve warm or at room temperature.
Tips for the Best Pecan Pie Muffins
- Use fresh pecans: They provide the best flavor and texture.
- Don’t overmix: Stir only until the ingredients are combined to keep the muffins tender.
- Let the melted butter cool: Very hot butter can affect the eggs and batter.
- Watch the baking time: Slightly underbaked centers give these muffins their signature pecan-pie texture.
- Toast the pecans: For an even deeper flavor, toast the chopped pecans for a few minutes before adding them to the batter.
Optional Additions
For extra pecan-pie flavor, add a tablespoon of maple syrup or a small pinch of cinnamon to the batter. You can also drizzle the cooled muffins with a simple vanilla glaze.
Storage
Store the muffins in an airtight container at room temperature for up to 3 days or refrigerate them for up to 5 days.
They can also be frozen for up to 2 months. Thaw at room temperature and warm gently before serving.
