These Cheesy Beef and Onion Spring Rolls are crispy on the outside, juicy and flavorful inside, and packed with seasoned ground beef, tender onions, and melted cheese. They make a delicious appetizer, party snack, or easy family meal.
Ingredients
- 1 lb (450 g) ground beef
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- 1 cup shredded cheddar or mozzarella cheese
- 12–15 spring roll wrappers
- 1 tablespoon all-purpose flour
- 2 tablespoons water
- Vegetable oil, for frying
Instructions
1. Cook the Beef and Onion
Heat a large skillet over medium-high heat.
Add the ground beef and cook for 5–7 minutes, breaking it apart with a spoon, until browned and cooked through.
Drain excess grease if necessary.
Add the diced onion and garlic. Cook for another 3–4 minutes, until the onion becomes soft and lightly golden.
Stir in the soy sauce, Worcestershire sauce, smoked paprika, black pepper, and salt.
Cook for another minute, then remove from the heat.
Allow the beef mixture to cool slightly.
2. Add the Cheese
Transfer the beef mixture to a bowl and let it cool for a few minutes.
Stir in the shredded cheese until evenly distributed.
Letting the filling cool slightly helps prevent the spring roll wrappers from becoming too soft.
3. Roll the Spring Rolls
Mix the flour and water together in a small bowl to make a simple sealing paste.
Place one spring roll wrapper on a clean surface with one corner pointing toward you.
Place about 2 tablespoons of the beef and cheese filling near the lower center of the wrapper.
Fold the bottom corner over the filling, then fold in both sides.
Roll it tightly toward the remaining corner.
Brush the final corner with the flour mixture and seal the spring roll.
Repeat with the remaining wrappers and filling.
4. Fry Until Golden
Heat about 1½–2 inches of vegetable oil in a deep skillet or saucepan to approximately 350°F (175°C).
Carefully place the spring rolls into the hot oil in small batches. Avoid overcrowding the pan.
Fry for about 3–4 minutes, turning occasionally, until crisp and golden brown.
Transfer to a plate lined with paper towels to drain excess oil.
5. Serve
Serve the spring rolls hot while the cheese is still melted and the wrappers are crispy.
They are delicious with sweet chili sauce, garlic mayonnaise, ranch dressing, or a spicy dipping sauce.
Air Fryer Method
For a lighter option, lightly brush or spray the assembled spring rolls with oil.
Place them in an air fryer in a single layer and cook at 375°F (190°C) for 8–12 minutes, turning halfway through, until golden and crisp.
Tips for the Best Spring Rolls
- Let the filling cool before wrapping to prevent soggy wrappers.
- Don’t overfill the wrappers or they may burst while cooking.
- Roll the spring rolls tightly so the filling stays inside.
- Keep unused wrappers covered with a slightly damp kitchen towel so they don’t dry out.
- Fry in batches to maintain the oil temperature and achieve a crisp exterior.
- For extra cheesiness, use a combination of cheddar and mozzarella.
Storage
Cooked spring rolls can be refrigerated in an airtight container for up to 3 days. Reheat them in an air fryer or oven to restore their crisp texture.
Uncooked spring rolls can also be frozen in a single layer and then transferred to a freezer-safe bag. Cook them directly from frozen, adding a few extra minutes to the cooking time.
